The Demi Chef de Partie position at Pebble Beach Company plays a critical role within the culinary team, ensuring the highest quality food preparation and presentation standards across all lodge outlets, banquets, special parties, and events. This role requires a deep knowledge of culinary techniques, superior knife skills, and the ability to perform both hot and cold food preparation at an expert level. The Demi Chef de Partie will work closely with team leaders and kitchen staff to uphold exceptional culinary standards, contribute to menu development, manage mise en place, and support banquet operations. The candidate will be responsible for various kitchen stations including Stillwater Grill, Tap Room, Gallery Café, and banquet stations, ensuring consistency and quality in every dish presented to guests. The role requires proficiency in various cooking techniques such as frying, grilling, roasting, baking, and poaching, as well as the preparation of sauces, salads, and cold dishes. The DEMI Chef de Partie will also contribute to ongoing menu reviews and training of junior kitchen staff, supporting kitchen operations in a high-pressure environment where timing and quality are paramount.

Job Requirements
- High school diploma or equivalent
- Six years kitchen experience with at least two years in equivalent role at premier restaurant, resort or hotel
- Proficient knife skills and knowledge of hot and cold food preparation
- Ability to handle multiple kitchen stations including banquets and restaurants
- Ability to work flexible shifts including nights, weekends, and holidays
- Must comply with all health, safety, and sanitation policies
- Ability to communicate effectively with team members
- Physical ability to lift and stand for long periods
- Willingness to learn and train others
- Must be authorized to work in the United States
Job Qualifications

Job Duties
- Assign tasks to employees with the approval of team leaders
- Prepare cold food sandwiches, salads, and dressings
- Basic vegetable prep including slicing, dicing and proper handling
- Preparation and handling of meat, fish, vegetables, starches
- Basic hot food preparation using frying, grilling, baking, roasting and poaching techniques
- Prepare sauces including saucier and butter-based sauces
- Prepare soups, sauces, and other menu items as directed
- Set up employee dining room cooking and salad bar
- Maintain exact recipe usage and assist in preparing new recipe cards
- Assist in menu reviews and revisions
- Work across kitchen stations such as Stillwater Grill, Tap Room, and banquet stations
- Set up mise en place for the station
- Set up buffet stations and perform carving or stir fry as needed
- Oversee food quality and consistency at the station
- Create high-quality daily specials
- Maintain soup and special schedules
- Time cooking to ensure simultaneous completion of entrees
- Arrange food attractively on plates
- Assist with banquet dish-up
- Add garnishes to complete plates
- Support other cooks and lines promoting teamwork
- Assist with special events
- Monitor cost-consciousness
- Rotate food in storage to ensure freshness
- Keep work areas and refrigerators clean and neat
- Clean and maintain equipment and cooking surfaces
- Report faulty equipment or unsafe conditions
- Help train new cooking staff
- Collaborate with butcher for consistent product and inventory
- Contribute to daily food order
- Communicate production schedule with team leaders
- Suggest improvements for food quality and presentation
