Job Requirements

  • High school diploma or equivalent
  • Culinary degree preferred
  • Must have comprehensive knowledge of food and products, standard recipes and preparations
  • Must have knowledge of all applicable federal, state and local health and safety regulations
  • Ability to obtain any government required licenses or certificates including a racing license
  • CPR training required
  • Must be able to grasp, lift, carry or transport up to 50 lbs
  • Must be able to stand, walk or sit for extended periods
  • May be exposed to working in a noisy environment
  • Must be at least 21 years old
  • Must be able to obtain and maintain appropriate licensing
  • Must be able to pass a background investigation
  • Subject to pre-employment drug screening

Job Qualifications

  • Comprehensive knowledge of food and products, standard recipes and preparations
  • Knowledge of all applicable federal, state and local health and safety regulations
  • Comprehensive knowledge of the English language to read event orders and communicate effectively with guests and employees
  • Basic mathematical skills
  • Ability to operate all food equipment
  • Ability to set realistic goals and standards
  • Ability to obtain any government required licenses or certificates including a racing license
  • CPR training required
  • First aid training preferred

Job Duties

  • Train, supervise and work with all the kitchen staffs in order to prepare, cook and present food according to resort standard recipes
  • Provide quality food products and meet budget requirements
  • Set an example of excellence to all employees in terms of attendance, morale, appearance and work ethic
  • Communicate with Chef and Food and Beverage Director throughout the week to stay informed of work
  • Supervise the culinary staff schedules to maintain proper coverage while keeping payroll costs in line
  • Ensure proper training of all department members
  • Review Event Order sheets for all food specifications
  • Ensure proper receiving, storage (including temp. settings) and rotation of food products to exceed Health Department regulations
  • Hire, schedule and train all culinary staff to include conducting roll call and monthly meetings, illustrating proper food handling techniques
  • Monitor staff performance
  • Verbally communicate calmly and positively with service staff during business operations
  • Supervise clean up of kitchen area and proper breakdown and storage of equipment
  • Check staff attendance and adjust and reassign stations as necessary to provide quality food service during operations
  • Attend meetings as necessary
  • Order supplies from purchasing departments
  • Perform all other duties as assigned
