The Culinary Supervisor role at Legends Global is pivotal to the smooth operations and success of its concession kitchens. Reporting directly to the Concessions Chef, this supervisory position oversees day-to-day kitchen activities, ensuring that all food preparation aligns with company standards and delivers exceptional quality to guests. The Culinary Supervisor guides and motivates a team focused on surpassing guest expectations through professionalism, attention to detail, and hospitality excellence. This role requires a hands-on leader who is not only passionate about culinary arts but also dedicated to upholding food safety and sanitation policies, maintaining cleanliness, and managing kitchen equipment properly. The supervisor will conduct uniform checks and manage inventory while fostering a cooperative team atmosphere in a high-energy environment.
Key responsibilities include following and executing procedures as assigned by Executive or Sous Chefs, daily communication with leadership regarding kitchen needs and progress, and ensuring portion control and adherence to departmental policies. The Culinary Supervisor is essential in maintaining HACCP standards, safeguarding food quality through diligent temperature monitoring and product rotation, and guaranteeing the overall cleanliness and safety of the kitchen environment. This role also involves hands-on participation during preparation and service, demanding physical stamina such as the ability to stand, walk for long hours, and perform manual tasks including lifting and pushing heavy items.
The ideal candidate will have professional culinary training or experience working in fast-paced, high-volume fine dining or catering environments. Full-service casual dining experience is preferred, demonstrating extensive knowledge of food and beverage menus, preparation methods, and customer service excellence. Applicants must also be able to obtain food safety certification and be flexible to work extended hours during stadium events, including nights, weekends, and holidays. Job Requirements
- Professional training or relevant experience in culinary arts
- knowledge of food safety standards
- physical ability to perform manual tasks including lifting up to 50lbs and standing for extended periods
- availability to work during stadium events including nights, weekends and holidays
- good communication skills in English
- willingness to comply with safety and grooming standards
- ability to multi-task in a fast-paced environment
Job Qualifications
- Professional training through a culinary education or experience in a fast-paced, high-volume fine dining or catering facility
- extensive knowledge of food and beverage menu, specials, and services offered
- ability to obtain food safety certification
- ability to multi-task in a fast-paced, team-oriented setting
- ability to read, speak and write in English
- sufficient mobility to perform assigned tasks including reaching, bending, stooping, wiping, pushing, and pulling
- ability to lift, push, pull approximately 50lbs
- ability to stand or walk for long periods
- availability for all stadium events
- ability to work extended hours including late nights, weekends and holidays
- practice safe work habits and follow all safety policies and procedures
Job Duties
- Follow Executive Chef and Sous Chefs assignments for opening and closing procedures and food preparation
- lead a team with respect and commitment to exceeding guest expectations daily
- perform daily uniform checks with staff and help maintain kitchen standards
- ensure compliance with portion sizes, quality standards, and departmental policies
- maintain HACCP standards including food temperature monitoring and cleanliness
- maintain kitchen cleanliness including walk-in coolers, storage, shelves, walls, floors, and drains
- ensure all food preparation equipment is clean, sanitized, and operable
- identify and properly store all food items according to standards
- participate in monthly inventory of department
- participate as a team player with responsibilities related to preparation, service and delivery of product
- adhere to uniform and grooming guidelines
- perform other duties as assigned
