The Culinary Supervisor position is a dynamic and pivotal role within Legends Global's concessions team. Reporting directly to the Concessions Chef, the Culinary Supervisor will be responsible for coordinating the day-to-day operations of assigned kitchens during stadium or event operations. This role is designed for an individual who excels in high-volume, fast-paced environments and is committed to upholding the highest standards of food quality, safety, and hygiene.
In this role, the Culinary Supervisor will lead and mentor a team of culinary staff, ensuring that all food preparation aligns with the Executive Chef and Sous Chef's instructions. They will oversee opening and closing procedures, conduct daily uniform inspections, and enforce portion control and departmental policies. Maintaining HACCP standards is a critical aspect of the position, requiring strict adherence to temperature controls, product rotation, and overall sanitation.
The role demands hands-on leadership to maintain kitchen cleanliness and ensure all equipment is clean, sanitized, and in safe operating condition. The supervisor will also manage the proper storage of all food items and participate in monthly inventory counts to ensure operational efficiency and waste minimization. Collaboration with the larger kitchen team is essential, contributing to preparation, service, and delivery of food products with a focus on exceeding guest expectations.

Job Requirements
- Professional training through a culinary education or similar experience
- Experience working in a fast-paced, high-volume food service environment
- Strong knowledge of food safety and sanitation standards
- Ability to lead and manage a team effectively
- Excellent communication skills in English
- Physical ability to perform kitchen duties including lifting 50lbs and standing for long periods
- Flexibility to work extended hours, including nights, weekends and holidays
- Availability for all stadium events
- Commitment to safety policies and procedures
- Food safety certification or willingness to obtain it
Job Qualifications
- Professional training through a culinary education or working in a fast-paced, high-volume fine dining restaurant/catering facility
- Full service casual dining preferred
- Extensive knowledge of food and beverage menu, specials and services offered
- Ability to multi-task in a fast paced, team orientated setting
- Ability to read, speak and write in English
- Must have sufficient mobility to perform assigned tasks including constant reaching, bending, stooping, wiping, pushing, and pulling for extended periods of time
- Must have the ability to lift, push, pull approximately 50lbs
- Must be able to stand or walk for long periods of time
- Must be available for all stadium events
- Must be able to obtain food safety certification
Job Duties
- Follow Executive Chef and/or Sous Chefs assignments for opening and closing procedures and food preparation
- Lead a team with respect and commitment to exceeding guest expectations daily
- Perform daily uniform checks with staff and help Chefs to maintain standards in the kitchen
- Ensure assigned staff are preparing food items by complying with portion size, quality standards, departmental rules, policies and procedures
- Maintain HACCP standards ensuring a high-quality level of food, food temperatures, rotation of product, cleanliness and sanitation standards
- Maintain cleanliness of kitchen including walk-in coolers, dry storage, shelves, walls, floors and drains
- Ensure all food preparation equipment is clean, sanitized and is kept in a safe and operable condition
- Report issues to the Chefs
- Identify and store meats, poultry, seafood, pasta, starches, dairy products, and all other food items according to established standards
- Participate in inventory monthly for department of responsibility
- Participate as a team player with specific responsibilities, as related to preparation, excellent service and delivery of product
- Adhere to the Legends Uniform and Grooming guidelines
- Perform other duties as assigned
