This role is responsible for coordinating the day-to-day operations of assigned kitchens, ensuring smooth execution in a fast-paced, high-volume environment such as stadiums and large-scale events. The primary mission of the Culinary Supervisor is to lead and motivate kitchen staff, oversee food preparation, maintain rigorous quality and safety standards, and support the management team in delivering outstanding foodservice. This role demands a proactive leader who can ensure compliance with portion control, maintain sanitation protocols, and manage kitchen equipment and inventory effectively.\n\nIn this position, the Culinary Supervisor plays a crucial role in upholding the high standards set by the Executive Chef and Sous Chefs, including following opening and closing procedures and providing daily progress updates. Leadership is exercised with respect and a strong commitment to exceeding guest expectations every day. Monitoring staff uniforms, enforcing departmental policies, and maintaining food safety and cleanliness standards such as HACCP are also key elements of the role. The ideal candidate will have professional culinary training or significant experience in fast-paced, high-volume dining environments, with an ability to multitask and communicate proficiently in English. Physical endurance and flexibility are essential due to the demands of working extended hours during events, including nights, weekends, and holidays. Job Requirements

  • Culinary education or equivalent experience
  • experience in fast-paced, high-volume kitchen environments
  • knowledge of food safety and sanitation standards
  • physical ability to lift 50lbs and endure long periods of standing or walking
  • ability to communicate effectively in English
  • availability to work extended hours, nights, weekends and holidays
  • willingness to obtain food safety certification
  • commitment to follow safety policies and procedures

Job Qualifications

  • Professional training through culinary education or experience in a fast-paced, high-volume fine dining restaurant or catering facility
  • extensive knowledge of food and beverage menu, specials and services offered
  • ability to obtain food safety certification
  • ability to multi-task in a fast-paced, team-oriented setting
  • ability to read, speak and write in English
  • sufficient mobility to perform assigned tasks including reaching, bending, stooping, wiping, pushing, and pulling for extended periods
  • ability to lift, push, pull approximately 50lbs
  • ability to stand or walk for long periods
  • availability for all stadium events
  • willingness to work extended hours including late nights, weekends and holidays
  • practice safe work habits and complete required safety training

Job Duties

  • Follow Executive Chef and Sous Chefs assignments for opening and closing procedures and food preparation
  • lead a team with respect and commitment to exceeding guest expectations daily
  • perform daily uniform checks with staff and help Chefs maintain standards in the kitchen
  • ensure assigned staff prepare food items by complying with portion size, quality standards, departmental rules, policies and procedures
  • maintain HACCP standards ensuring high-quality food, food temperatures, product rotation, cleanliness and sanitation standards
  • maintain cleanliness of kitchen including walk-in coolers, dry storage, shelves, walls, floors and drains
  • ensure all food preparation equipment is clean, sanitized and kept in a safe and operable condition and report issues to Chefs
  • identify and store meats, poultry, seafood, pasta, starches, dairy products, and other food items according to standards
  • participate in inventory monthly for department of responsibility
  • participate as a team player with specific responsibilities related to preparation, service and delivery of product
  • adhere to Legends Uniform and Grooming guidelines
  • perform other duties as assigned
