Job Requirements
- High school diploma or equivalent
- Professional culinary training or relevant experience in fast-paced, high-volume food service
- Food safety certification or ability to obtain
- Strong leadership and communication skills
- Ability to perform physically demanding tasks including lifting up to 50 pounds
- Flexibility to work extended hours, weekends and holidays
- Ability to follow safety policies and procedures
- Commitment to adhere to uniform and grooming standards
Job Qualifications
- Professional training through culinary education or experience in fast-paced, high-volume fine dining or catering facility
- Full service casual dining experience preferred
- Extensive knowledge of food and beverage menu, specials and services offered
- Ability to obtain food safety certification
- Ability to multi-task in fast paced, team orientated setting
- Ability to read, speak and write in English
- Sufficient mobility to perform assigned tasks including reaching, bending, stooping, wiping, pushing, and pulling for extended periods
- Ability to lift, push and pull approximately 50 pounds
- Ability to stand or walk for long periods
- Availability for all Stadium events
- Ability to work extended hours including late nights, weekends and holidays
Job Duties
- Follow Executive Chef and/or Sous Chefs assignments for opening and closing procedures and food preparation
- Report back to Chefs daily on progress and needs
- Lead a team with respect and commitment to exceeding guest expectations daily
- Perform daily uniform checks with staff and help Chefs maintain standards in the kitchen
- Ensure assigned staff prepare food items complying with portion size, quality standards, departmental rules, policies and procedures
- Maintain HACCP standards ensuring high-quality food, food temperatures, product rotation, cleanliness and sanitation standards
- Maintain cleanliness of kitchen including walk-in coolers, dry storage, shelves, walls, floors and drains
- Ensure all food preparation equipment is clean, sanitized and kept in safe operable condition and report issues to Chefs
- Identify and store meats, poultry, seafood, pasta, starches, dairy products and all other food items according to established standards
- Participate in inventory monthly for department of responsibility
- Participate as a team player with specific responsibilities related to preparation, excellent service and delivery of product
- Adhere to Legends Uniform and Grooming guidelines
- Perform other duties as assigned
