The Culinary Operations Executive (COE) role at Walk-On's Sports Bistreaux represents a key leadership position responsible for directing all culinary functions within the restaurant. Serving at the heart of the operation, the COE leads the Heart of House (HOH) team to deliver high-quality, Louisiana-inspired dishes in a fast-paced and detail-oriented kitchen. This role requires a deep understanding of culinary techniques, recipes, specifications, and the effective use of advanced kitchen equipment. The COE skillfully supports a scratch kitchen that values fresh ingredients and impeccable standards in cleanliness and operational excellence.

Success in this role is measured not only by culinary expertise but also by the ability to create a positive and welcoming atmosphere that promotes teamwork and continuous development. The COE is entrusted with inspiring, coaching, teaching, and mentoring the HOH team members, ensuring that each guest enjoys an unforgettable dining experience. Job Requirements

  • Minimum of 4 years of management experience in a high-volume, full-service restaurant setting
  • Proven history of success and upward movement within previous roles
  • Strong communication and leadership abilities
  • Culinary school background is a plus

Job Duties

  • Ensure adequate staffing by recruiting and interviewing skilled kitchen personnel per company guidelines
  • Manage the HOH team, including scheduling, performance evaluation, and disciplinary actions
  • Facilitate ongoing training and professional growth for all Heart of House team members
  • Motivate the team daily to foster a fun and productive work environment
  • Uphold the highest standards of food quality from kitchen to table
  • Communicate effectively with management and corporate teams to ensure smooth operations
  • Build trust among team members and management by providing transparent communication and feedback
  • Maintain all Walk-On's standards and hold the team accountable to these benchmarks
  • Establish operational goals and implement follow-up plans for the HOH team, assuming responsibility for outcomes
  • Ensure adherence to all kitchen systems and protocols, including food ordering, setting and maintaining pars, and proper inventory management
  • Support the highest food quality standards through Walk-On's established systems
  • Implement and comply with Walk-On's/Ecosure safety and sanitation guidelines
  • Drive financial success for the HOH through effective food cost management, inventory control, waste reduction, and labor management
