The Culinary Assistant at Kindred Hospital Brea plays an essential role in maintaining high-quality nutrition and food safety standards for patients, staff, and visitors. This position is vital in supporting the hospital's mission by ensuring all meal preparation follows stringent food handling regulations and nutritional guidelines as set forth by department policies and the FDA Food Code. Job Qualifications

  • High school diploma or equivalent
  • Food handler permit if required by state or local jurisdiction
  • One year experience in quality food preparation setting such as hospital, restaurant, nursing center, or hotel
  • Full understanding of therapeutic diets preferred

Job Duties

  • Assist in preparing food following department standardized recipes, planned menus, and policies and procedures
  • Serves and portions food per patient diet order, department standardized recipes, planned menus, and policies and procedures
  • Follow standardized menus for patients and cafeteria food preparation
  • Make only authorized changes to the planned menu and record the change according to established policy
  • Use production sheets to direct preparation and quantity of food
  • Complete food preparation to meet established mealtimes
  • Prepare and serve food at the proper temperature set forth by the FDA Food Code
  • Prepare patient snack orders using a production sheet ensuring proper labeling and timely distribution
  • Label, date, and store food including leftovers properly according to cool-down techniques and established policies
  • Assist in receiving, storing, and verifying invoices for food supplies as directed
  • Ensure adequate supply of food and report stock levels to supervisor timely
  • Use food supplies and equipment efficiently to prevent waste
  • Stock nourishment rooms and administration lounge per procedure
  • Keep work area clean and uncluttered during food preparation and service
  • Perform cleaning using proper chemicals
  • Follow infection control techniques using protective equipment
  • Wash dishes, pots, and pans per procedures
  • Take dish machine temperature and sanitizer concentration and log data
  • Report any issues with water temperature or sanitizer immediately
  • Store dishes, pots, pans to prevent contamination
  • Operate equipment per manufacturer guidelines and maintain equipment safety
  • Maintain department security
  • Check diet orders, discharges, and room changes before meal tray assembly
  • Assist patients with menu selections using menu management system
  • Handle cashier duties including verifying and balancing cash bank
  • Ensure order accuracy and proper payment processing
  • Resolve minor customer complaints and escalate if needed
  • Keep checkout area clean and stocked
  • Fulfill job responsibilities in line with company's code of conduct and legal standards
  • Maintain confidentiality of patient and employee information
