The Kitchen Manager Apprentice position is an integral part of The Broadmoor's Culinary Team and is offered through the CRF Kitchen Manager Apprenticeship Program. This 18-month apprenticeship is designed to educate and mentor aspiring culinary professionals, providing them with hands-on training and real-world experience. The program aims to develop individuals from entry-level culinarians into accomplished leaders who uphold the highest culinary standards. Apprentices will have the opportunity to rotate through various kitchen stations every three months, gaining comprehensive exposure to different culinary areas within the hotel. This program not only emphasizes practical cooking skills but also the management and operational aspects of a high-caliber kitchen.
Participants will attend Broadmoor Skills Courses and occasional field trips, complete essential hospitality management training including Manage First Hospitality Accounting, Purchasing, Human Resource Management and Supervision courses, and earn a ServSafe Manager Certification. The program includes a commitment of 2,000 hours over the 18-month period, ensuring thorough learning and skill development. Apprentices will assist in all aspects of kitchen operations—from maintaining ingredient inventories and proper food rotation to preparing a la carte and banquet menus—while developing an understanding of culinary presentation, portion control, and quality consistency.
The program is geared toward individuals who have at least a High School Diploma or GED, with two years of preferred entry-level culinary experience. Success in the apprenticeship will culminate in graduates moving into the Lead Cook 1 role within The Broadmoor’s kitchen team. This role offers a starting pay rate of $18.05 per hour and places strong importance on teamwork, reliability, and the ability to work efficiently under pressure. The program also supports physical requirements such as lifting up to 50 pounds and working in both indoor and outdoor kitchen conditions. Job Duties

- train to assist precisely follow portion control, presentation, consistency, and flavor as determined by culinary department

- maintain Serv Safe and health department standards
- train to check and complete mise en place and pars to set-up the station
- uphold and abide by all Broadmoor policies, procedures, and safety guidelines
- take required breaks, notifying supervisor prior to leaving station
- other duties as assigned
