San Quentin State Prison (SQ) is California's oldest and most renowned correctional institution, established in July 1852 at Point San Quentin as a response to the lawlessness that prevailed in California during that era. The Correctional Supervising Cook position at SQ is a full-time role within the Medical Program, offering an annual salary range of USD 4,586 to 6,371. This supervisory role operates under the direction of the Food Administrator I/II, Correctional Facility (CF), or the supervision of the Supervising Correctional Cook, Department of Corrections (DOC). The main responsibilities involve overseeing and training staff and incarcerated workers tasked with preparing meals specifically tailored to patients in a correctional health care facility. This includes managing the preparation and dispensing of therapeutic diets as prescribed by physicians, ensuring strict adherence to relevant regulations and manuals such as Title 15, the Department Operations Manual, California Code of Regulations Title 22, the Diet Manual, and the California Retail Food Code.
The Correctional Supervising Cook ensures that all departmental and institutional policies and procedures are followed, maintaining high standards of food safety, sanitation, and nutritional accuracy. Supervising the cleaning and sanitation of kitchen facilities and equipment is also a critical part of the role, along with maintaining order and supervising the conduct of incarcerated workers. A key element of this position is protecting the safety and security of persons and property within the facility. The role requires a strong leadership presence to enforce compliance with operational standards while fostering an environment conducive to rehabilitation. This position requires the incumbent to participate in the Personal Leave Program 2025 (PLP 2025), which includes a salary reduction and the accrual of leave credits monthly through June 2027.
Applicants must have passed the required examination through CalCareers to be eligible for this role. The minimum qualifications include experience in either a supervisory capacity overseeing cooks and food service workers or experience as a Cook Specialist II within California state service. Educational requirements are equivalent to completion of twelfth grade. This role offers a chance to work in one of California’s most historic correctional facilities while contributing to the health and well-being of incarcerated patients, managing food service operations in a secure healthcare environment, and developing supervisory skills within a critical state program.
