California Medical Facility (CMF) is a state-run correctional institution located in Vacaville, California. This facility is unique in that it serves as a medical prison designed to provide healthcare services and recreational opportunities to incarcerated individuals. Situated approximately 35 miles east of Sacramento and about 53 miles west of San Francisco, CMF is strategically located near several family-friendly and recreational attractions like Napa and the Vacaville Outlets. The facility offers ample free parking and is accessible to both employees and visitors, enhancing convenience for those working or interacting with the institution.
The role of Correctional Supervising Cook at CMF involves supervisory responsibilities within the prison kitchen environment. This is a full-time, permanent position with a salary range from $4,586 to $5,639 per month. Under the direction of a Supervising Correctional Cook, this position requires overseeing incarcerated cook crews responsible for preparing, cooking, and serving meals. Job Requirements
- Possession of minimum qualifications verified prior to interview and appointment
- Completion of background investigation process including Live Scan Fingerprinting and Tuberculosis testing
- Valid California driver's license if required
- Ability to work in a correctional facility environment
- Ability to supervise incarcerated persons
- Ability to maintain kitchen security and sanitation
- Effective communication skills
- Ability to follow standardized recipes and menu plans
- Ability to complete paperwork and reports accurately

Job Qualifications
- Knowledge of principles, procedures, and equipment used in storage, care, preparation, cooking including baking, dispensing and serving food in large quantities
- Knowledge of kitchen sanitation and safety measures
- Knowledge of food handling sanitation including Hazard Analysis Critical Control Point Programs
- Understanding of food values and nutritional as well as economical substitutions within food groups
- Knowledge of principles of effective supervision
- Knowledge of food accounting and use of purchase orders for food and equipment
- Ability to plan palatable and adequate menus
- Ability to plan, organize, and direct the work of others
- Ability to keep records, prepare reports and memorandums
- Ability to communicate effectively for successful job performance
- Ability to keep inventories and make requisitions
- Ability to judge food quality and determine food quantities for groups of varying sizes
- Ability to prepare and cook all food groups
- Ability to direct the preparation and distribution of special diets

Job Duties
- Supervise and instruct incarcerated person cook crews in preparation, cooking and serving of meals following the weekly menu and standardized cooking recipes
- Supervise the preparation of sack lunches, fresh fruits, and vegetables for cooking and serving
- Maintain good sanitary standards of the kitchen and its equipment
- Complete requisitions reports, refrigerator temperatures, and log sheets as required
- Maintain security of doors to kitchen at all times
- Ensure that all kitchen policies and procedures are enforced and followed by incarcerated persons under your supervision
- Perform other related functions and duties as directed by Supervising Correctional Cooks, Assistant Correctional Food Manager or Correctional Food Manager
