The role of Correctional Supervising Cook, CF, is a critical position within San Quentin's Food and Nutrition Services department. This part-time role, working approximately eight hours per week with a monthly salary ranging from $917 to $1,128, involves supervising and training staff and inmate-workers responsible for preparing meals tailored to the needs of patients in the correctional health care facility. Under the guidance of the Food Administrator I/II or supervision of the Supervising Correctional Cook, DOC, the Correctional Supervising Cook ensures adherence to strict dietary programs, including the preparation and dispensing of therapeutic diets per physician orders.
This role demands comprehensive knowledge of and strict compliance with a variety of regulations such as Title 15, the Department Operations Manual, California Code of Regulations Title 22, Standard Operating Procedures, the Diet Manual, California Retail Food Code, and the Food and Nutrition Services Manual. The Correctional Supervising Cook supervises the kitchen's cleaning and sanitation processes, maintaining high standards for the facility and its equipment, and enforces rigorous safety protocols. Additionally, management of inmate conduct within the kitchen environment and safeguarding the safety of personnel and property are essential responsibilities.
Successful candidates for this role will have experience either as a Cook Specialist II within California state service or as a supervisor overseeing cooks and food service workers in a related capacity. The role requires at least equivalent education to a twelfth-grade completion and the ability to pass the CalCareers examination to obtain list eligibility. This position plays a vital part in ensuring that dietary services meet health and safety standards while fostering a secure and efficient kitchen operation in a correctional setting.

Job Requirements
- Equivalent to completion of the twelfth grade
- One year of experience in the California state service performing the duties of a Cook Specialist II (Correctional Facility) or a Cook Specialist II
- Two years of supervisory experience over cooks and food service workers with responsibility for supervising and assisting with food preparation, cooking, and serving
- Must pass the CalCareers examination for list eligibility
- Valid email address for communication
- Part-time availability to work 8 hours per week
Job Qualifications
- Equivalent to completion of twelfth grade
- One year experience in California state service as Cook Specialist II or two years supervisory experience over cooks and food service workers
- Knowledge of food preparation and safety regulations
- Ability to supervise and train staff and inmate-workers
- Familiarity with correctional facility policies and procedures
