Job Description

California Medical Facility (CMF) is a state-operated correctional health care facility located in California, dedicated to providing specialized medical services to incarcerated individuals. Managed under the California Department of Corrections and Rehabilitation, CMF focuses on delivering comprehensive health care within a secure and controlled environment, aiming to improve the well-being and rehabilitation outcomes of its patient population. As a vital part of the state's correctional health care system, CMF integrates medical treatment, dietary services, and security practices to maintain the facility's operational efficiency and the safety of all individuals within its premises.

The role of Correctional Supervising Cook at CMF is a critical position within the Medical program, focusing on the preparation and management of therapeutic diets specifically tailored to meet the dietary requirements prescribed by physicians for incarcerated patients. This part-time position offers a competitive salary range from USD 4,586 to 5,639 per month and requires a unique blend of culinary expertise, supervisory skills, and strict adherence to institutional policies and public health regulations.

The Correctional Supervising Cook works under the direct guidance of the Food Administrator I/II or the Supervising Correctional Cook within the correctional facility. The core responsibilities include supervising and training kitchen staff and incarcerated workers who are engaged in meal preparation. This role ensures that meals are prepared following precise therapeutic diet plans, maintaining nutritional standards critical to patient care in a correctional health environment.

In addition to food preparation oversight, the Correctional Supervising Cook is responsible for enforcing compliance with a variety of regulatory standards and policies, including Title 15 and Title 22 of the California Code of Regulations, the Department Operations Manual, the Diet Manual, the California Retail Food Code, and other relevant Food and Nutrition Services Manuals. These rules govern food safety, sanitation, and operational procedures essential to maintaining a clean and safe kitchen environment.

A significant part of the role involves supervising the cleaning and sanitation of kitchen facilities and equipment, which is vital for minimizing health risks and ensuring adherence to food safety protocols. Moreover, the incumbent is tasked with maintaining order within the kitchen, managing the conduct of incarcerated workers, and protecting both persons and property. These duties underscore the importance of balancing security concerns with the operational needs of a correctional health care kitchen.

The position reflects the implementation of the Personal Leave Program 2025 (PLP 2025), which affects salary and leave credits for employees in Bargaining Unit 15 and related employment categories. Under this program, base salary is reduced by 3 percent, and employees receive five hours of leave credits monthly through June 2027. This policy also applies on a prorated basis to part-time and permanent intermittent employees.

This role requires candidates to qualify through a designated examination process to ensure their capability to manage the specialized needs of correctional facility food service operations effectively. The position is ideal for individuals with prior supervisory experience in food preparation in settings that require rigorous compliance with health, safety, and security standards.

Overall, the Correctional Supervising Cook at California Medical Facility plays a pivotal role in supporting the health care mission of the institution by managing food services that meet exacting therapeutic and regulatory standards, ensuring safety and sanitation, and maintaining security within the kitchen environment.
