This position is within a County correctional facility, operated under the jurisdiction of local government authorities, providing essential services to incarcerated individuals and youth. The facility functions both as a secure environment and a place where individuals are provided with basic needs, including food services, as part of their incarceration. The correctional facility kitchen operates on strict compliance with health and safety regulations and serves large groups multiple times a day, ensuring that inmates receive nutritionally balanced, safe, and properly prepared meals. The administration is committed to maintaining a clean, safe, and efficient food service operation while engaging incarcerated individuals in constructive and supervised activities, such as food preparation and cooking, helping promote rehabilitation and skill-building.

The role of the Cook in this correctional facility involves the preparation, cooking, and serving of food in both small and large quantities. This position requires working under the direction of supervisory staff and includes tasks ranging from basic food preparation to baking small volumes and managing special dietary needs. The Cook is responsible for planning and instructing cooking activities for inmates and incarcerated youth, including directing and monitoring their performance with a focus on safety, sanitation, and food handling standards. This role requires efficiency in minimizing waste, storing leftovers appropriately, and organizing work areas to meet strict health and safety standards. The Cook may also be involved in inventory management, ordering supplies, and maintaining documentation related to food services.

In addition to preparing meals, the Cook assists with the distribution of food, operates industrial kitchen equipment, and ensures the kitchen environment maintains sanitary conditions. The role entails monitoring food temperatures for safety, inspecting equipment for optimal working condition, and maintaining protocol for safe food handling and storage. The position demands physical tasks such as lifting up to 40 pounds and enduring long periods of standing or walking, often in varying temperature conditions.

The Cook plays a vital leadership role when assigned, directing inmates or incarcerated youth in their tasks, monitoring their performance, and ensuring compliance with facility policies. This includes fulfilling administrative duties, preparing reports, updating staff on legislative or procedural changes, and contributing to the overall safety and security of the kitchen environment. The Cook may also serve as a Disaster Service Worker when required, highlighting the importance of flexibility and readiness in this role.

Job Qualifications

Job Duties

  • Prepares, cooks, and serves a wide variety of foods, including special diet foods
  • apportions meals based on recipe and uses applicable serving instruments
  • plans and instructs cooking activities for inmates and incarcerated youth on cooking tasks

  • ensures the equipment, utensils, and work environment are orderly, clean, and safe and safe food handling techniques are used
  • inspects and organizes work area for safety
  • monitors and ensures proper safety and security practices are in place and maintained
  • inspects equipment used in preparing food to ensure optimum working condition
  • reports on equipment failure and/or issues to the supervisor and/or appropriate parties
  • inventories, orders, receives, delivers, and stores food and supplies
  • maintains documentation of food and supplies
  • prepares reports and documents
  • completes reports related to inmates, incarcerated youth, and/or employees pertaining to incidents and/or injuries
  • updates staff on changes in legislation, policies, procedures, and other agency requirements

  • when assigned lead, may lead workers, inmates, and/or incarcerated youth in performing food service duties
  • may plan, instruct, and assign cooking activities and tasks related to food service within the correctional facility
  • may be assigned as a Disaster Service Worker (DSW), as required
  • performs other related duties, as required
