The Cornbread Combo role is an essential dual-position that combines both kitchen prep/cooking duties with dishwashing responsibilities. This unique position offers a comprehensive experience in the culinary field, making it perfect for individuals looking to expand their skills across multiple areas of kitchen operations. The role requires the candidate to efficiently and accurately manage both food preparation and cleaning duties, ensuring seamless service during various meal periods. Working in this capacity allows the individual to gain hands-on experience in cooking tasks such as stirring, straining, parboiling, and reducing sauces, along with maintaining cleanliness and sanitation standards of plates, flatware, cooking equipment, and general kitchen areas.
Employees in this role strictly follow Cornbread’s Standard Operating Procedures to uphold food safety and quality standards. They are responsible for managing and rotating food products appropriately to minimize waste and spoilage, while informing the Chef on Duty of any sub-standard items. The role demands teamwork, with collaboration alongside management staff to maintain a clean and organized workspace. Besides cooking and prep duties, the Combo role also involves duties related to dish machine operation, sanitation of pans and utensils, and garbage disposal, ensuring that the kitchen environment stays professional and meets health department guidelines.

Job Requirements
- high school diploma or equivalent
- 1 year experience as a prep cook or similar role
- food handlers certificate within 30 days or serv safe equivalent
- ability to lift 50+ lbs and stand for long periods
- ability to operate carts and hand trucks
- ability to work indoors and outdoors
- strong teamwork and communication skills
- attention to detail and safety consciousness
Job Qualifications
- food service: 1 year as a prep cook or similar role
- proficiency in technology, writing, reading
- people skills: dealing with a team proactively, professionally, and positively

- food handlers certificate within 30 days or serv safe equivalent

- able to work indoors and sometimes outdoors throughout the shift
- cooks spend most of their time in the kitchen, with occasional work in outdoor areas
- frequent work includes hot ranges, walk-in freezers, and coolers
Job Duties
- manage all types of food and food products to prepare and present for dining customers
- follow all Cornbread Standard Operating Procedures to properly and efficiently prep and prepare all hot and cold food to the DOH and Cornbread’s standards
- perform basic cooking tasks such as stirring, straining, and parboiling food and reducing sauces, measuring seasonings, condiments, and ingredients for use in cooking
- work as a team with the management staff by performing routine cleaning and basic upkeep of the front and the back of the house
- perform general duties associated with setting up and breaking down stations throughout the kitchen and restaurant to start or close a shift as directed
- rotate, label, and date all products to minimize waste and spoilage
- inform the Chef on Duty of any sub-par product before the start of service
- maintain all kitchen equipment in clean working order at all times and escalate any issues to leadership
- practice safe and clean work habits to avoid injury to self and others
- updates knowledge and skills by participating in staff training opportunities
- responsible for set-up, operation, and cleaning of the dish machine
- scrape, rinse, and load dishes and utensils into the dish machine
- wash and sanitize all pans, utensils, and dishes
- clean, sanitize, and maintain dish machine
- unload dishes and utensils from the dish machine and organize them properly
- clean food prep stations and equipment
- empty garbage containers and move to designated areas regularly
- sweeps and mops
- removes trash from Food Services areas, maintaining a clean and professional area
- ensures that we meet or exceed DOH guidelines
- support kitchen teams in receiving and storing goods
- assist kitchen staff as needed, especially during peak times
- perform opening, closing, and side work
- perform additional cleaning duties as requested
