The Military Sealift Command (MSC) is a critical component of the United States Navy responsible for providing strategic sealift and logistics support to naval and joint military operations worldwide. This role is not just about baking; it encompasses comprehensive responsibilities including food preparation aligned with progressive cooking methods, adherence to sanitation and safety standards, inventory management, and maintaining cleanliness of the galley and bakery environments. The incumbent works closely with the Chief Cook and operates with varying degrees of independence depending on the vessel assignment, such as T-ARS, ESB, T-EPF, T-AH, EPF, and T-ATF, sometimes preparing meals solo during designated periods.\n\nIn addition to hands-on culinary duties, the Cook Baker plays an important role in the upkeep and safe use of food service equipment, routine inspections, requisitioning bakery supplies, and ensuring leftovers and unused provisions are properly stored and labeled. Their adherence to all food safety, sanitation, and personal hygiene protocols is vital for the wellbeing of all onboard personnel. This role requires adaptability to different schedules and operational conditions, a commitment to environmental regulations for waste disposal, and a dedication to maintaining standards in line with MSC and Navy policies. Job Requirements
- Must be a United States citizen
- at least 18 years of age
- possess and maintain a valid U.S. regular passport with minimum seven months expiration
- hold a current TWIC or Department of Defense CAC card with at least ten months remaining
- possess a valid United States Coast Guard Merchant Mariner's Credential with at least ten months remaining
- have a valid USCG Medical Certificate without food handling restrictions
- MMC endorsed as Ordinary Seaman, Wiper, or Stewards Department (FH)
- possess one year of cumulative experience as MSC Cook/Baker within past five years
- successful completion of MSC Baking Techniques course
- completion of current U.S. Armed Forces Food Safety/Sanitation Supervisor Course or annual four hour sanitation training
- maintain updated sanitation certification or equivalent
- able to work independently and as part of a team in a maritime environment
- comply with all MSC safety and operational regulations
Job Qualifications
- United States citizenship
- possession of a U.S. regular passport with at least seven months validity
- valid Transportation Worker Identification Credential (TWIC) or Department of Defense Common Access Card (CAC) with minimum of ten months validity
- United States Coast Guard Merchant Mariner's Credential (MMC) with at least ten months remaining
- U.S. Coast Guard Medical Certificate without restrictions on food handling
- MMC endorsement as Ordinary Seaman, Wiper, or Stewards Department (FH)
- one year of cumulative service as MSC permanent Second Cook or temporary Cook/Baker within the past five years
- successful completion of MSC Baking Techniques course
- completion of U.S. Armed Forces Food Safety/Sanitation Supervisor Course or equivalent annual sanitation training
- previous military culinary experience or commercial baking experience documented
- graduation from accredited culinary academy with Serv-Safe sanitation certification
- certification as Certified Working Pastry Chef or higher from American Culinary Federation
- documented experience on official letterhead with employer verification
Job Duties
- Prepare all bakery items in accordance with the daily production sheet
- prepare all menu items using progressive cooking techniques and healthy heart guidelines
- inspect and maintain food service and baking equipment
- assist in inventory control of galley equipment and utensils
- maintain sanitation and safety standards including cleaning and waste disposal
- requisition and receive bakery items needed for daily preparation
- assist Chief Cook and perform other duties as assigned
