Job Description

The Federal Bureau of Prisons (BOP) is a government agency responsible for the custody and care of federal inmates, ensuring a balance of security, humane treatment, and successful reintegration into society. Operating under the Department of Justice, the BOP manages various correctional facilities across the United States, including Federal Correctional Institutions (FCI) like the one located in Miami, Florida. The Cook Supervisor will be responsible for the direct supervision and instruction of 25 to 30 inmate workers performing various cooking and food preparation tasks. These tasks include but are not limited to cooking, butchering, baking, vegetable preparation, and dishwashing. A critical aspect of this role involves providing ongoing training to inmate workers to enhance their knowledge of food production, presentation, and sanitation standards.

In addition to kitchen duties, the Cook Supervisor maintains security operations within the food service area, including key control, yeast control, knife and blade control, inmate accountability, and contraband searches. Correctional responsibilities are a priority, ensuring the security of the institution is upheld at all times. The supervisor will oversee the receiving, storing, and issuance of all food and non-food items, coordinating to maintain proper inventory and safety standards.

The ideal candidate must possess an approved Food Protection Manager Certification from an ANSI-accredited provider and demonstrate strong supervisory skills and an aptitude for working with prisoners. A thorough understanding of food preparation principles, especially for special diets such as high protein, low cholesterol, low fat, calorie-restricted, and sodium-restricted menus, is required. The candidate should also have experience cooking large quantities of food, planning meals, and making necessary substitutions and adjustments.

Applicants must be U.S. citizens and meet special conditions, including pre-employment screenings such as background investigations, urinalysis, physical exams, and a panel interview. Successful completion of a three-week training course titled "Introduction to Correctional Techniques" is also mandatory. Job Duties

  • Provide supervision and instruction to inmate workers assigned duties of cooks, butchers, bakers, dining and dish workers, vegetable preparation workers, and pot and pan washers
  • Provide continual training to inmate workers in all phases of production, presentation, and sanitation of food items
  • Oversee the receiving, storing, and issuance of all food and non-food items
  • Manage security operations such as key control, yeast control, knife and blade control, inmate accountability, and conduct routine contraband searches
  • Maintain security of the institution in collaboration with other correctional staff
  • Ensure inmates follow established safety and sanitation standards
  • Plan, prepare, and adjust food preparation procedures and menus according to standardized recipes and special diet requirements
