Job Description

The supervisor is responsible for overseeing the overall food production process, ensuring that meals are prepared according to standardized recipes and meet dietary requirements such as modified and special diets.

In this role, the Cook Supervisor not only manages food preparation but also ensures compliance with security protocols including key control, knife and blade control, and conducting contraband searches in the work area. This role carries a dual responsibility where correctional security duties take precedence alongside the supervisory and instructional responsibilities related to food service. The incumbent will be tasked with maintaining a safe environment while promoting professional training and development for inmate workers in culinary skills and sanitation.

To be successful in this position, candidates must possess a Food Protection Manager Certification accredited by the American National Standards Institute (ANSI), along with demonstrated expertise in large quantity food preparation and knowledge of special diets. Strong supervisory skills and the ability to work within correctional security guidelines are essential. Additionally, new employees will complete training in correctional techniques and must meet specific federal employment conditions such as citizenship, background checks, and qualification verification.

Job Requirements

  • U.S. citizenship required
  • Completion of pre-employment and panel interview, urinalysis, physical examination, background investigation
  • Pass National Crime Information Center (NCIC) and credit checks
  • Completion of qualification inquiry regarding domestic violence misdemeanor convictions if not currently employed in an institution
  • Successful completion of Introduction to Correctional Techniques training course at Glynco, Georgia
  • Meet the Barely Acceptable level on supervisory and prisoner interaction assessment elements
  • Submit proof of Food Protection Manager Certification at time of application
  • Ability to work shift schedules
  • Maximum entry age of 36 unless veteran preference applies
  • Must meet CTAP or ICTAP criteria for selection priority when applicable

Job Qualifications

  • Sufficient training and experience to perform duties of the position
  • Ability to supervise
  • Aptitude for work with prisoners
  • Knowledge of full range food preparation principles and techniques
  • Knowledge of cooking procedures for large quantities
  • Understanding of special and modified diets such as high protein, low cholesterol, low fat, calorie restricted, sodium restricted
  • Food Protection Manager Certification accredited by ANSI
  • Experience in supervising inmate workers in a correctional setting is preferred

Job Duties

  • Provide supervision and instruction to 25-30 inmate workers assigned as cooks, butchers, bakers, dining and dish workers, vegetable preparation workers, pot and pan washers
  • Provide continual training to inmate workers updating their knowledge in food production, presentation, and sanitation
  • Oversee receiving, storing, and issuing of all food and non-food items
  • Manage security operations such as key control, yeast control, knife and blade control, inmate accountability, conduct contraband searches
  • Maintain institutional security as part of correctional responsibilities
  • Ensure preparation, cooking, seasoning, and portioning of food according to standardized recipes
  • Plan and coordinate meal preparation including substitutions and adjustments for special diets
