The Cook position at Louisiana Behavioral Health plays a crucial role in supporting the nutritional and therapeutic needs of patients within the facility. This role is responsible for performing a wide array of volume food preparation tasks, planning cooking schedules, and professionally directing kitchen assistants to ensure smooth kitchen operations. The Cook prepares and serves meals according to established menus, physician orders, patient preferences, and therapeutic diet requirements, making sure that all food meets quality and safety standards.

This position demands a precise understanding of dietary protocols and the ability to manage multiple responsibilities in a fast-paced kitchen environment. The Cook ensures that all food is prepared and served at proper temperatures, maintains hygiene and sanitation standards in accordance with Joint Commission, federal, and state regulations, as well as organizational policies and procedures. Additionally, the Cook is tasked with making appropriate food substitutions within food groups as directed, preparing meals for the following day, and maintaining clean and organized kitchen spaces. This role also involves recording temperature logs for safety compliance and adhering strictly to performance improvement standards.

Job Requirements

  • Completion of culinary school
  • Minimum of 2 years experience as a cook in a nursing home or hospital setting preferred
  • Ability to work in a high-paced, stressful environment
  • Capable of heavy lifting and physical exertion
  • Willingness to work in kitchen temperatures above 90 degrees
  • Ability to cope mentally and physically with interruptions and fast-paced atmosphere

Job Qualifications

  • Must be able to read and write
  • Follow recipes and use measurements
  • Have basic experience in cooking and understand fundamentals of therapeutic diets
  • Be proficient in performing duties within a three-month time frame
  • Be able to plan, organize, and meet servicing deadlines
  • Successfully complete CPR certification
  • Complete an Oceans approved behavioral health de-escalation program

Job Duties

  • Plan daily cooking schedule to meet deadlines and follow standardized recipes
  • Direct the work of assistants and aides in a professional manner
  • Prepare and serve meals per menus, physician orders, resident preferences, and therapeutic diet spreadsheet
  • Assure food is served at proper temperatures and record these temperatures
  • Make proper food substitutions within food groups as directed
  • Serve food on tray line at mealtime
  • Clean, sanitize, and cover kitchen equipment and follow listed cleaning assignments
  • Prepare for the following day's menu
  • Adhere to all policies and procedures
  • Perform other duties as assigned
