Job Description

The Cook position within the Leal Hospitality Group is a vital role responsible for handling all aspects of food production across various divisions, including prep, line, pantry, pizza, catering, restaurant, and bakery operations within the hospitality portfolio. This hands-on role requires an individual who can execute standardized recipes efficiently while upholding a safe and clean work environment. The cook will receive cross-training to perform all back-of-house functions and will be expected to assist wherever needed, contributing to a well-rounded and cohesive culinary team. Communication with management is essential to ensure tasks are completed effectively and on schedule.

The role expects the highest standards of food quality and sanitation to be maintained consistently. Key duties include preparing and cooking food according to recipes and quality guidelines, handling ingredient preparation such as portioning, chopping, and storage, operating various kitchen equipment like ovens and grills, monitoring food quality throughout the preparation process, and maintaining organized workstations. Additionally, the cook will be responsible for serving food in appropriate portions and ensuring the cleanliness and safety of all kitchen areas, including equipment and floor spaces.

Candidates for this position should have a minimum of two years' experience in the culinary field, with prior restaurant experience considered an asset. Advanced knife skills and the ability to work safely with all kitchen equipment are critical. The cook must be able to work effectively under pressure, manage last-minute guest requests, and remain calm while resolving problems using sound judgment. Strong communication and interpersonal skills are required to ensure smooth and efficient operations in a high-volume environment. Job Duties

  • Prepare and cook food according to recipes, quality standards, presentation standards, and food preparation checklist
  • Prepare ingredients for cooking, including portioning, chopping, and storing food
  • Wash and peel fresh fruits and vegetables
  • Weigh, measure, and mix ingredients
  • Prepare cold foods
  • Operate ovens, stoves, grills, microwaves, and fryers
  • Test foods to determine if they have been cooked sufficiently
  • Monitor food quality while preparing food
  • Set-up and break down work station
  • Organize for prep work before, during, and after service
  • Serve food in proper portions onto proper receptacles
  • Check and ensure the correctness of the temperature of appliances and food
  • Ability to anticipate the guest orders and be able to focus and execute under high pressure
  • Ability to adjust for guest special requests at the last minute
  • Ability to communicate clearly in a high-volume operation
  • Wash and disinfect kitchen area, tables, tools, knives, and equipment
  • Maintain high standards for safety and cleanliness of all work areas including sanitation of station and line consistently during and after service, including floor areas
  • Perform dishwashing duties as needed
  • Maintain organization of refrigeration units, dry goods, and equipment areas
  • Ability to work under pressure and remain calm to resolve problems using good judgment
  • Practice safe working habits and take required rest breaks and meal periods in a timely manner
  • Perform all other duties as required by management
