The Barfield, Autograph Collection, is a distinguished boutique hotel located in the heart of downtown Amarillo, Texas. The position available is for a Cook II within the culinary department, reporting directly to the Executive Chef. This is a non-exempt role focused on preparing various food items for breakfast, lunch, and dinner at assigned kitchen stations. The role is critical in maintaining the high standards of food quality, safety, and sanitation that The Barfield is known for. Responsibilities include a wide range of cooking techniques such as steaming, baking, boiling, frying, broiling, and grilling. The Cook II is expected to manage ingredient preparation which involves portioning, chopping, washing, peeling, and mixing, ensuring that each dish is prepared to the hotel's exacting standards.
This role emphasizes the importance of setting up, clearing, and breaking down workstations, operating kitchen equipment safely and efficiently, and maintaining cleanliness in all kitchen and storage areas. The Cook II must follow company policies, including food safety regulations, and help control food costs by minimizing waste. Attention to detail and teamwork are key components, as this position requires the individual to work well both independently and in collaboration with others. The successful candidate will be someone who is motivated, punctual, presents themselves professionally in uniform, and adapts easily to the fast-paced and changing kitchen environment. Job Requirements
- High school diploma or equivalent
- Previous kitchen experience preferred
- Ability to safely operate kitchen equipment
- Ability to stand or walk for long periods
- Ability to lift and carry up to 50 pounds occasionally
- Ability to tolerate extreme temperature changes in kitchen environment
- Ability to follow safety and sanitation guidelines
- Ability to work nights, weekends, and overtime
- Ability to wear required personal protective equipment including closed-toe, non-canvas, non-skid shoes
- Ability to maintain punctuality and adhere to uniform standards
- Ability to work both independently and in a team
Job Qualifications
- Previous kitchen experience preferred
- Ability to follow recipes and calculate amounts within recipes
- Good safe knife and equipment skills
- Proficient operation of standard kitchen equipment including blender, slicer, grinder, chopper, mixer, oven, grill, steamers, steam jacket kettles, fryer, and tilting skillet
- Good reading and conversion skills
- Ability to absorb information quickly
- Good judgment, initiative, and teamwork
- Ability to adapt to change and new situations
- Ability to follow verbal and written instructions
- Ability to maintain food quality regardless of staffing level
- Ability to make decisions to ensure quality guest service
- Ability to maintain regular attendance and punctuality
- Ability to maintain effective working relationships
- Willingness to work nights, weekends, and/or overtime if required
Job Duties
- Prepare a variety of foods using methods such as steaming, baking, boiling, frying, broiling, and grilling to meet production schedule
- Pull required items and prep ingredients including portioning, chopping, and storing food
- Set up, clear, and break down work station
- Prepare food according to company recipes and quality standards
- Test foods for doneness and monitor food quality
- Wash and disinfect kitchen area, tables, tools, knives, and equipment
- Maintain cleanliness and sanitation in working and storage areas
- Report maintenance problems to supervisor
- Follow company, safety, and sanitation policies
- Maintain food at proper temperatures and handle food safely
- Control waste and maintain food cost
- Maintain product rotation, temperature maintenance, and storage procedures
- Train and retrain on food preparation, safety, and sanitation
- Foster teamwork and communication with employees and supervisors
- Work safely with kitchen equipment
- Respond professionally to questions and requests
- Work independently and motivate others
- Report to work on time, in uniform, ready to work
- Perform other duties as assigned by supervisor
