Job Requirements

  • two years of progressively responsible experience in quantity cooking
  • ability to lift and carry items weighing up to 70 pounds
  • willing to work beyond scheduled hours including evenings, weekends, and holidays
  • no history of sexual abuse or misconduct in correctional facilities
  • comply with Prison Rape Elimination Act regulations
  • submit transcripts or diplomas if using education as substitution for experience

Job Qualifications

  • two years of progressively responsible quantity cooking experience in a restaurant, hotel, hospital, school, or institution
  • thorough knowledge of all types of foodstuffs and cooking methods
  • ability to perform general cooking duties with little or no supervision
  • ability to prepare modified or special diet meals
  • completion of cooking or baking courses can substitute for experience
  • completion of cafeteria management course can substitute for experience

Job Duties

  • perform cooking activities at a cooking station in a large kitchen or have responsibility for all cooking activities in a small kitchen
  • supervise kitchen and cook helpers as required
  • prepare meals including simple, routine and complex cooking tasks
  • monitor food preparation by timing, flavoring, and stirring
  • cook meats, fish, and poultry using various methods such as roasting, baking, broiling, and frying
  • prepare baked goods including breads, cakes, pies, and cookies
  • prepare special diet meals such as soft, salt-free, allergy, and puree diets
