The Culinary Cook role at PENN Entertainment plays a vital part in ensuring that the culinary services meet the highest standards of quality and customer satisfaction. This full-time position requires a seasoned culinary professional who thrives in a high-volume food service operation. The Culinary Cook provides fast, friendly, professional, and responsive customer service to both culinary team members and buffet guests. The role involves greeting and welcoming guests, preparing various food items including breakfast, entrees, and desserts per guest orders while employing proper cooking techniques and adhering strictly to health and safety standards.

The cook prepares food items according to special requests, maintaining current and accurate information regarding food items such as preparation techniques, ingredients, and seasonings. They are responsible for slicing, dicing, chopping raw products, carving meats, portioning food, adding sauces and garnishes, and ensuring a clean and safe workstation by wiping counters, sinks, and floors. Maintaining par levels of supplies and food products is also a key task, requiring the cook to replenish stock from warehouse inventory as needed. Operating and maintaining culinary equipment and utensils safely is another important duty, alongside providing personalized service by using guests' names and promoting current casino events and programs.

Job Requirements

  • Three years' prior experience as cook in high volume food service operation
  • Knowledge of kitchen sanitation, operation, and maintenance of kitchen equipment
  • Basic knowledge of food preparation techniques
  • Knowledge of weights, measures and recipe yield
  • Possess and maintain culinary tools (knives) to perform the necessary job functions
  • Read, write legibly, understand and speak English
  • Excellent customer service and communication skills
  • Available to work required schedule which may include nights, weekends, holidays and overtime as needed
  • Must be able to respond to visual and oral cues
  • Must be able to tolerate areas with high temperatures
  • Must be able to tolerate industry standard chemicals used for cleaning and sanitizing
  • Able to work at a fast pace in often crowded and noisy environment
  • Must be able to maintain a neat, professional, well-groomed appearance and uphold company appearance and dress standards

Job Duties

  • Provides fast, friendly, professional and responsive customer service to culinary team members and buffet guests
  • Greets and makes welcome each guest approaching their station
  • Maintains current and accurate information regarding food items including preparation techniques, seasonings, and ingredients
  • Prepares food items per guest order including breakfast items, entrees and desserts according to guest request
  • Employs proper cooking methods, cooks to specifications, and handles, stores and rotates food properly in accordance with established health and safety standards
  • Slices, dices, chops and prepares raw products
  • Carves meats, portions food on serving plates, adds gravies and sauces, and garnishes plates as required
  • Wipes counter areas, sinks and floors as required to maintain a clean and safe work station
  • Maintains cleanliness of designated areas in accordance with established health and safety standards
  • Maintains par levels of operating supplies and food product for each workstation obtaining replacement stock from warehouse inventory
  • Operates and maintains all equipment and utensils in accordance with established guidelines and safety procedures
  • Provides personalized service and uses guests' names when possible
  • Knows and promotes current casino events and programs and can give guests directions to all casino areas
