The Cook position at Ventana Canyon plays a vital role in maintaining the resort’s culinary excellence. Under the supervision of the Chef or Sous Chefs, the cook is responsible for preparing high-quality food products for the enjoyment of members and guests. This role involves following recipes precisely, handling a diverse array of kitchen equipment such as ovens, burners, broilers, deep fryers, knives, and slicers, and ensuring that all health and safety standards established by regulatory agencies are met without exception. The cook will primarily be engaged in preparing menu items aligned with production plans and forecast needs, while managing food items efficiently to minimize waste. Attention to cleanliness and sanitation in the kitchen is fundamental to the role, and the cook will be expected to maintain these standards rigorously in their assigned areas. Additional responsibilities include reporting any equipment malfunctions or food shortages promptly to supervisors, actively participating in team meetings, and embracing flexibility to take on varied tasks within the kitchen department as directed by management. Job Requirements
- one to two years related culinary experience in fine dining and/or training
- must have Food Handler's card or Serv Safe Certification
- must be able to pass a background check
- must be able to physically reach, bend, stoop, kneel, and lift up to 100 pounds
- must stand for long periods of time
- must be able to work under variable temperature conditions (extreme heat or cold)
- must be able to perform repetitive movements
- must be able to work in a loud environment
- exposure to water, chemicals, and cleaning agents
Job Qualifications
- one to two years related culinary experience in fine dining and/or training
- must have Food Handler's card or Serv Safe Certification
- able to apply basic math skills
- attention to detail
- able to work flexible working hours, including weekends, evenings and holidays
- required to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals
- able to write routine reports and correspondence
- able to speak effectively before groups of customers or associates of the organization
Job Duties
- prepares enough food products in accordance to production plan or forecast needs
- alerts chef or supervisor of any equipment breakdowns, food overages, or shortages in a timely manner
- works the line
- required to have knowledge of meat, fish, poultry and other food internal temperatures
- maintains overall cleanliness and sanitation standards in assigned areas
- wraps, dates, and rotate food items
- utilizes whole food products eliminating any waste
- incorporates safe work practices in job performance
- maintains flexibility to take on new and different tasks as directed by the department manager
- attend staff meetings
