Job Description

We are currently seeking a dedicated and experienced Lead Cook to join our dynamic kitchen team. This non-exempt position reports directly to the Executive Chef and plays an essential role in maintaining efficient kitchen operations. The Lead Cook will be responsible for preparing various foods for breakfast, lunch, and dinner at an assigned kitchen station. The role entails set-up and breakdown of the work station, preparation of ingredients, cooking using multiple methods such as steaming, baking, boiling, frying, broiling, and grilling, and ensuring food quality and presentation meet company standards. Capable of working independently and leading by example, the successful candidate must adhere to safety and sanitation policies at all times, helping to maintain a clean and organized kitchen environment.

In addition to food preparation, the Lead Cook will control costs by minimizing waste, manage proper storage and handling of food products, and perform regular checks on kitchen appliances and food temperatures to ensure compliance with safety regulations. This role demands strong leadership skills, the ability to motivate team members, and excellent communication to foster a collaborative and efficient work atmosphere. The ideal candidate will have previous kitchen supervisory experience, proficient skills operating standard kitchen equipment like blenders, slicers, grills, steamers, and ovens, as well as a strong understanding of food safety procedures and corporate environmental policies. Physical stamina and the ability to work in varying temperature conditions are necessary due to the demanding nature of kitchen environments.

Job Requirements

  • Ability to follow recipes and calculate amounts within recipes
  • Good safe knife and equipment skills
  • Previous kitchen supervisory experience preferred
  • Must be able to operate standard kitchen equipment including blender, slicer, grinder, chopper, mixer, oven, grill, steamers, steam jacket kettles, fryer, and tilting skillet
  • Good reading and conversion skills
  • Ability to absorb a large amount of information in a short period of time
  • Ability to use good judgment, initiative and teamwork
  • Ability to adapt to change, new situations, changes in staffing and procedures
  • Ability to follow verbal and written instructions
  • Ability to maintain food quality regardless of business and staffing level
  • Ability to make decisions as needed to ensure quality guest service
  • Ability to maintain regular attendance and punctuality
  • Ability to maintain effective working relationships with fellow employees
  • May be required to work nights, weekends, and/or overtime

Job Duties

  • Prepares a variety of foods with various cooking methods including steaming, baking, boiling, frying, broiling, and grilling to meet production schedule
  • Pulls required items in sufficient quantities to prep according to menu forecasts
  • Sets up, clears and breaks down work station
  • Prepares selected food as directed in accordance with standard company recipes, quality standards, presentation standards, and food preparation checklist
  • Wash and disinfect kitchen area, tables, tools, knives, and equipment
  • Checks and ensures the correctness of the temperature of appliances and food
  • Cleans working and storage areas, tools, equipment and floors as needed
  • Reports any maintenance problems or other problem areas to supervisor as they occur
  • Follows company, safety and sanitation policies and procedures and ensures compliance with these policies
  • Maintains food at proper temperatures in appropriate serving pans and handles food following proper procedures to ensure sanitation and safety
  • Controls waste and maintains food cost
  • Maintains all sanitation requirements including product rotation, temperature maintenance, and storage procedures, cooling requirements, and handling techniques
  • Continually and properly trains and re-trains all areas of food preparation, safety, and sanitation
  • Maintains and develops teamwork and open lines of communication with employees and supervisors
  • Works safely and efficiently with all kitchen equipment
  • Responds professionally to all questions and requests
  • Works well without supervision, motivates others, shows initiative and desire to get things done
  • Reports to work on time, in a clean and complete uniform, ready to work
  • Responsible for proper opening and closing of the line
  • Conducts line sweeps to ensure everything is properly labeled and dated
  • Any other responsibilities as assigned by supervisor
