The Sushi Cook position at Wynn Resorts is an integral role within a high-volume, luxury hotel or restaurant environment, focusing on preparing and finishing foods in the sushi station. This position requires maintaining the highest standards of food quality, sanitation, and safety compliant with state and local health regulations. The Sushi Cook will be responsible for accurately following recipes, possessing strong knife skills, conducting product inventories, and assisting senior kitchen staff such as the Chef de Partie and Chef in production. They must ensure that the sushi station is organized and clean throughout the shift, including proper labeling and dating of all products to guarantee food safety. Additionally, this role requires excellent communication skills in English, the ability to work well under pressure, strong teamwork capabilities, and good judgment to resolve any operational issues effectively.
This is a full-time role that expects a minimum of three years of culinary experience, preferably in a scratch-cooking environment with an emphasis on high volume and luxury service. While a culinary degree is preferred, it is not mandatory, but candidates must hold a valid Food Handler Safety Training card and be at least 18 years old. Job Qualifications
- Must be able to communicate in English, read and follow recipes, and complete basic mathematical calculations
- 3 years culinary experience in a similar role, preferably in high volume, luxury hotel or restaurant, scratch-cooking environment
- Exhibit extensive sanitation and culinary knowledge and accurate knife skills
- Ability to work in an organized fashion and within a team environment
- Ability to work well under pressure, be a logical thinker, remain calm and resolve problems using good judgment
- Ability to prioritize and follow through to meet deadlines
- Must be able to obtain and maintain any required licensing or active work cards
- Culinary training degree preferred but not required
- Candidate must be at least 18 years old
- Requires valid Food Handler Safety Training card
Job Duties
- Responsible for preparing and finishing foods in the sushi station
- Meet quality standards and maintain cleanliness and sanitation of work areas and equipment according to health department standards
- Assist the Chef de Partie and Chef as needed in execution of production
- Properly label and date all products to ensure safekeeping and sanitation
- Apply adept knife skills required for preparation
- Break down work station and complete closing duties including returning food items to proper storage, rotating product, wrapping, covering, labeling, dating all items, organizing storage areas, cleaning food prep area and walk-ins
- Maintain accurate inventories and inform management of restocking needs to prevent product shortages
- Notify chef on duty prior to end of shift if unable to complete assigned tasks within allotted time
