Job Requirements

  • High School Diploma or equivalent
  • three plus years cooking experience in upscale, high volume hotel or freestanding restaurant or post secondary culinary training/certification as Cook with two years hands on experience
  • thorough knowledge and understanding of Food Service Sanitation Standards
  • thorough knowledge and understanding of standard kitchen equipment and its use
  • ability to stand, stoop, bend
  • lift and carry up to 50 pounds
  • ability to read, write and speak English
  • ability to work flexible schedule including weekends and holidays

Job Duties

  • Oversees preparation and production of all cold food items
  • supervises Pantry/Prep personnel
  • supervises setup and organization of work area with all necessary supplies and equipment
  • receives, inspects, rotates all food products to ensure high quality and freshness
  • supervises preparation and storage of raw food products prior to final assembly
  • ensures standardized recipes are followed for cold menu items
  • assists Pantry/Preparation personnel as needed
  • monitors plating of cold foods to adhere to presentation guidelines
  • uses kitchen equipment safely according to manufacturer recommendations
  • notifies Supervisor of equipment malfunctions or safety hazards
  • returns utensils to pot wash area and informs Steward of HOT items
  • cleans and breaks down work area at end of shifts and returns ingredients to proper storage
  • ensures all closing side work is complete and kitchen is secure
  • promotes teamwork
  • notifies appropriate personnel promptly of issues
  • communicates politely and helpfully with guests and team members
  • executes emergency procedures per hotel standards
  • complies with safety regulations
  • attends hotel meetings and training sessions
  • maintains cleanliness and condition of equipment and work area
  • complies with hotel policies and rules
  • recycles whenever possible
  • remains current with hotel information
  • complies with uniform and grooming standards
  • performs other duties as assigned
