The position involves preparing special meals and substitute items, regulating the temperature of various cooking appliances such as ovens, broilers, grills, and roasters, and ensuring food is thawed appropriately from freezer storage. A significant aspect of the role is focused on maintaining food quality, portion control, proper arrangement, and attractive garnishing to meet the high standards expected by Renaissance Hotels. In addition, the role necessitates maintaining food logs and effectively communicating with the Chef and Food & Beverage service staff about menu specials, stock status, and any assistance needed during peak periods.
The position requires a thorough understanding of food preparation according to recipes, quality standards, presentation guidelines, and established food preparation checklists. Preparing cold foods is also part of the responsibilities, highlighting the diversity of culinary tasks involved. Although the role is primarily operative, it carries some responsibility in supporting management with staffing needs, such as assisting in hiring, training, scheduling, evaluating, counseling, disciplining, and coaching employees. Serving as a role model in the kitchen environment is emphasized, alongside adherence to company safety and security policies.
