The Cook I (Line Cook) role at San Manuel is a critical position under the direction of the Sous Chef, responsible for preparing food and menu items for guest consumption within the Food & Beverage/Culinary department. This role is designed for individuals who thrive in a fast-paced, high-demand kitchen environment and have a passion for culinary arts. As a Line Cook, you will be expected to utilize approved recipes, verified cooking methods, and quality ingredients to ensure consistent output is maintained both in flavor and appearance. The position emphasizes adherence to food safety standards, kitchen cleanliness, and equipment maintenance in strict accordance with health codes and casino standards.

The Line Cook functions as a key component of the culinary team, helping to uphold a best-in-class culture that delivers excellent guest service and supports the overall goals and priorities of the Tribal organization. The role requires multitasking across various cooking methods, demonstrating detailed knowledge of food products such as meat, poultry, fish, and produce, and ensuring compliance with FIFO (first-in, first-out) food rotation standards to minimize waste and guarantee freshness. Effective communication skills are essential for reading food order tickets, identifying special requests or substitutions, and coordinating with fellow kitchen staff to maintain efficient service flow.

Job Requirements

  • Must obtain and maintain a Food Handler’s Card
  • may be required to obtain and maintain a gaming license at the discretion of the San Manuel Tribal Gaming Commission
  • high school diploma or equivalent preferred
  • ability to work evening, weekend, and holiday shifts
  • physical strength to lift up to 40 pounds occasionally
  • ability to stand, walk, stoop, bend, kneel for extended periods
  • ability to follow health and safety regulations
  • neat, clean, and well-groomed appearance
  • no driving responsibilities required

Job Qualifications

  • Vocational, technical, or business certification preferred
  • knowledge of food preparation and presentation
  • capable of following procedures and taking direction
  • minimum one year of experience in high-volume line or production cooking preferred
  • ability to maintain composure in fast-paced environments
  • excellent communication skills

Job Duties

  • Maintain designated workstation ensuring recipes are consistent in flavor profiles, quality, and appearance
  • ensure production time frames are adhered to for all menu/food items being produced on assigned station
  • ensure workstations are fully stocked for forecasted business flow and restock before end of shift
  • possess adequate knowledge of basic food products and standard food production equipment
  • perform all basic cooking methods with proficiency
  • multitask within basic cooking methods to ensure no interruption in guest service
  • maintain understanding of the food rotation method "FIFO" and label and date all food items appropriately
  • ensure all food items are within expiration dates or dispose and log expired items
  • read food order tickets and identify menu items and substitution/special requests timely and clearly communicate to team members
  • perform other duties as assigned to support efficient department operations
