Job Duties

  • Comply with all authorized regulations, directives, standards, and procedures issued by the Air Force or TRDI
  • Cook to order hamburgers, cheeseburgers, salads, grilled ham and cheese sandwiches, eggs to order, omelets, steaks, chops, cutlets, and other related short order items
  • Assist Cook II as needed
  • Prepare food items in accordance with the production log and shift leader instructions
  • Wash, peel, chop, dice, and slice fruits, meats, and vegetables following standard recipes
  • Request subsistence supplies from Cook II and storeroom personnel
  • Pan up bacon, sausage, and ham for breakfast and mids meals
  • Setup specialty bars such as potato, pasta, fruit, omelet, and hamburger bars
  • Operate grill during meal periods
  • Garnish food items and serving lines
  • Use progressive cooking techniques
  • Check and log refrigerator temperatures
  • Cover, time, and date all food items before refrigeration
  • Serve correct food portions using appropriate utensils and wearing deli gloves
  • Check cleanliness of plates and bowls
  • Replenish food items from warmers as needed
  • Inform back-up cook when items are running low
  • Maintain line cleanliness using sanitizing agents
  • Check food temperatures to ensure 140 degrees maintenance
  • Assume shift leader duties in their absence
  • Follow Food Handlers Safety Components
  • Apply proper customer service techniques
  • Remove food at meal close, cover, time, date, and store properly
  • Taste test food during preparation
  • Prepare in-flight meal requests
  • Monitor and replenish food line
  • Advise facility manager of ration shortages
  • Practice good sanitation methods
  • Dispose of leftovers and complete waste logs
  • Comply with energy conservation and recycling programs
  • Attend allergy and foodborne illness in-service training
  • Follow HACCP policies
  • Report accidents and injuries timely
  • Participate in safety meetings and training
  • Maintain required security clearance and comply with drug-free policy
  • Adhere to Operations Security (OPSEC) and Property Control Plan
  • Comply with safety and health program including OSHA, DOD, Armed Forces, federal, state, and local regulations
  • Maintain site-specific Accident Prevention Plan (APP)
  • Attend training programs as designated
  • Other duties as assigned by Project Manager/Supervisor
