Job Duties
- Comply with all authorized regulations and directives
- Cook to order hamburgers, cheeseburgers, salads, grilled sandwiches, eggs, omelets, steaks, chops, cutlets, and related items
- Prepare required items according to production log and shift leader instructions
- Wash, peel, chop, dice, and prepare fruits, meats, and vegetables
- Request subsistence from Cook II
- Pan up bacon, sausage, and ham for breakfast and mid meals
- Setup specialty bars such as potato, pasta, fruit, omelet, and hamburger bars
- Work grill during meal periods
- Garnish food items and serving lines
- Use progressive cooking techniques
- Check and log refrigerator temperatures
- Cover, time, and date food items before refrigeration
- Serve correct food portions using deli gloves
- Check plates and bowls for cleanliness
- Replenish food items from food warmers
- Inform back-up cook when items run low
- Keep line free of spills and food debris using sanitizing agents
- Check food temperatures ensuring 140 degree maintenance
- Assume shift leader duties in their absence
- Follow Food Handlers Safety Components
- Use proper customer service techniques
- Remove food from line at meal close and cover, time, date
- Request subsistence from storeroom personnel
- Taste test food items during preparation
- Prepare in-flight meal requests
- Advise facility manager of ration shortages
- Practice good sanitation techniques
- Complete leftovers and waste log
- Return excess food to storeroom
- Comply with energy conservation and recycling programs
- Attend allergy and foodborne illness training
- Follow all HACCP policies and procedures
- Report accidents and injuries promptly
- Participate in safety meetings and hazard assessments
- Maintain security clearance
- Adhere to OPSEC procedures and Property Control Plan
- Comply with safety and health programs according to applicable regulations
- Maintain site-specific Accident Prevention Plan
- Attend training programs
- Perform other tasks as directed by Project Manager or Supervisor
