Job Requirements
- High school education or GED
- Must have commercial cooking experience
- Must have ServSafe Food Handler Certification
- Ability to work a flexible schedule including weekends, evenings, and holidays
- 1 year relevant work experience in commercial kitchen environment
- Ability to communicate orally and in writing
- Ability to make decisions and solve problems under pressure
- Ability to delegate responsibility and develop team members
- Ability to maintain confidentiality
- Working knowledge of Microsoft Office
- Must pass and maintain required security clearance
- Must comply with Drug Free Workplace policy
- Ability to adhere to safety and health requirements
- Must attend regular safety training and meetings
- Ability to perform manual prep work such as peeling, chopping, and slicing
- Ability to taste test food items
- Must practice good sanitation and food handling

Job Duties
- Comply with all authorized regulations and directives
- Cook to order a variety of menu items including hamburgers, sandwiches, eggs, steaks, and others
- Prepare required items according to production log and shift leader instructions
- Wash, peel, chop, dice, and slice fruits, meats, and vegetables following standard recipes
- Request subsistence supplies from Cook II
- Pan bacon, sausage, and ham for breakfast and mids meals
- Setup specialty food bars such as potato, pasta, fruit, omelet, and hamburger bars
- Work grill during meal periods
- Garnish food items and serving lines
- Use progressive cooking techniques
- Check and log refrigerator temperatures
- Cover, time, and date food items before refrigeration
- Serve correct portion sizes using proper utensils and gloves
- Inspect plates and bowls for cleanliness
- Replenish food from warmers to maintain availability
- Inform back-up cook of low items
- Maintain cleanliness of food lines and surrounding areas
- Monitor food temperatures to ensure safe serving (minimum 140°F)
- Assume shift leader duties in their absence
- Follow Food Handlers Safety Components
- Use customer service techniques effectively
- Remove and store leftover food properly at meal close
- Perform additional tasks as directed by project manager or supervisor
- Request subsistence from storeroom personnel
- Taste test food during preparation
- Prepare in-flight meal requests
- Ensure continuous food replenishment
- Adhere to sanitation and safety protocols
- Report accidents and injuries timely
- Participate in safety meetings and training
- Pass required security clearances
- Comply with Operation Security (OPSEC) and Property Control Plan
- Follow safety, environmental, and health programs and regulations
- Maintain site-specific Accident Prevention Plan
- Attend allergy and foodborne illness training
- Comply with HACCP policies and procedures
- Maintain a drug-free workplace
- Adhere to energy conservation and recycling programs
