Job Requirements

  • Pass food service sanitation course within 90 days
  • Meet all intermediate cook requirements
  • Proficient in preparation of mother sauces and derivatives
  • Knowledge of seasonal soup recipes
  • Proper braising techniques for various meats
  • Proficiency in all kitchen stations
  • Maintain station decorum regardless of business levels
  • Skilled in butchery of whole fish, chickens, and lamb
  • Advanced vegetable cookery techniques
  • Understand curing processes including smoking and pickling
  • Ability to work in smoke filled environment
  • Able to stand or sit for prolonged periods
  • Obtain and maintain PA Harness license

Job Qualifications

  • Culinary experience with knowledge of sauces and soups
  • Proficiency in braising and slow cooking methods
  • Skilled in meat and fish butchery
  • Advanced vegetable preparation skills
  • Familiarity with curing techniques such as dry and wet cure
  • Ability to work various shifts including weekends and holidays
  • Excellent communication and customer service skills
