Job Requirements
- High school graduate or equivalent experience preferred
- Two years experience in hospital, institutional, or restaurant food preparation required
- Ability to pass a physical evaluation, urine drug screen and pre-employment background checks
- Must obtain Food Handler card within six months of employment
- Compliance with COVID-19 vaccination program including full vaccination or approved exception
- Ability to follow sanitation, hygiene and safety standards strictly
- Effective communication skills
- Manual dexterity and numerical proficiency
- Willingness to work flexible hours and meet the demands of the hospital environment
Job Qualifications
- Manual dexterity required to manipulate and operate kitchen utensils and equipment skillfully
- Numerical ability required in calculating recipe yields
- Form perception and color discrimination required to detect differences in appearance of food indicating completion of cooking time, deterioration or contamination
- Comprehensive knowledge of food items
- Knowledge and consistent practice of food safety and sanitation guidelines such as HACCP and ServSafe
- Ability to read and understand written instructions, recipes and labels
- Effective communication skills with supervisors and food production employees
- Two years experience in hospital, institutional, or restaurant food preparation
- One year experience as a cook or assistant cook preferred
- Culinary certification preferred
Job Duties
- Maintain a safe, clean working environment including unit based safety and infection control requirements
- Bake, roast, broil, and steam meat, fish, vegetables and other foods as required
- Slice or portion food for serving
- Prepare sufficient quantities of food in accordance with the menu utilizing accepted sanitary standards and standardized recipes
- Practice portion control according to established standards
- Ensure proper food storage and elimination of waste
- Plan cooking schedule so foods will be ready at specified times
- Test and taste foods being prepared according to approved methods
- Check and ensure safe food temperatures for storing and serving food
- Check for indications of the presence of vermin, insects, mold and food deterioration
- Clean and sanitize work area and complete daily cleaning assignments
- Ensure cleanliness and safe handling of cooking equipment and utensils
- Record amount of food prepared and left over on production sheets
- Assemble trays at a reasonable rate with appropriate plate presentation
- Assist in production planning by providing input at production meetings including forecasting needs and assisting in standardized recipe development
