The position of Dietary Aide and Cook at PruittHealth involves assisting with the preparation and serving of meals that meet the nutritional requirements and preferences of residents in a long-term care setting. This role is critical in ensuring compliance with state and federal regulations regarding food safety, nutritional standards, and sanitation. The Dietary Aide supports the Food Service/Dietary Manager and supervisor by helping prepare snacks, salads, desserts, and meals, including special diet accommodations as prescribed by dietary guidelines. The Cook takes a lead role in preparing palatable, nutritious meals that are served at proper temperatures and times to maintain the health, weight, and satisfaction of residents. Attention to detail, teamwork, and adherence to established procedures and recipes are vital aspects of the job.

This full-time position requires a proactive and detail-oriented individual who can efficiently manage food preparation resources, maintain cleanliness and safety in all food service areas, and contribute to the supervision of kitchen staff. The Dietary Aide and Cook will be responsible for daily tasks such as preparing meals and between-meal nourishments, setting up tray lines, operating kitchen equipment including dishwashers and mixers, and ensuring food storage complies with health standards. Additionally, the role involves record-keeping, such as monitoring refrigeration temperatures and ensuring proper sanitizer levels. The position requires capability in following diet orders and providing menu substitutions as needed, along with participation in ongoing training and adherence to infection control policies. A minimum of one year of institutional food service experience as a cook is required, with experience in long-term care food production preferred.

Job Requirements

  • Sufficient education to demonstrate functional literacy
  • A minimum of one year institutional food service experience as a cook
  • Ability to follow detailed instructions and diet orders

Job Qualifications

Job Duties

  • Assist cook in meal preparation including salads, desserts, snacks and between-meal nourishments
  • Follow diet orders and NPO diet orders
  • Serve nourishments following procedural guidelines
  • Properly store leftovers and opened food
  • Serve partner meals according to procedures
  • Offer menu substitutions and record them as required
  • Comply with infection control policies
  • Deliver trays to patients and residents
  • Assist with serving beverages and making coffee/tea
  • Clean dining area tables after meals
  • Clean work area including sweeping, mopping and storing equipment
  • Clean kitchen equipment and appliances
  • Remove garbage and hose out containers
  • Scrape, wash and store dishes, pots and pans
  • Record temperatures of freezer and walk-in refrigerator
  • Maintain dishwasher and dish sink, check sanitizer and chemical levels
  • Maintain supply stock and proper storage
  • Set up tray line and perform tray line service
  • Operate kitchen machines including dish machine and food processors
  • Use, clean and maintain serving equipment
  • Apply knowledge of food handling regulations
  • Follow recipes provided by dietitian
  • Assist in supervising kitchen staff
  • Continuously clean food service areas
  • Use supplies efficiently to prevent waste
  • Prepare and maintain food substitutes for residents
  • Inspect trays to monitor food acceptance
  • Follow manufacturer instructions for equipment
  • Handle food according to state and federal regulations
