Job Description

This job opening is for the role of a Cook, a pivotal position within the culinary operations across REG’s hospitality and food service divisions. The Cook will be responsible for preparing, seasoning, and cooking a variety of menu items including soups, meats, vegetables, desserts, and more. The candidate will play an essential role in maintaining the high culinary standards that REG is known for, ensuring that every dish served meets the company’s quality expectations.
The successful candidate will demonstrate hands-on experience with a la carte, banquet, and large-volume cooking techniques. This includes expertise in managing precise meat temperatures, producing authentic sauces and compounds, and utilizing cooking methods such as poaching and sautéing to perfection. Cooks will learn and interpret menus and recipes effectively, ensuring accuracy and consistency in every preparation. They will also be adept at reading and managing multiple catering contracts simultaneously, preparing efficient prep lists, and maintaining impeccable food safety standards. This includes proper storage and holding temperatures, as well as maintaining sanitary work environments in compliance with state and local health regulations.
For those in a lead capacity, responsibilities extend to supervising team members in the absence of sous chefs, delegating work appropriately, and providing equipment training. The role requires flexibility in work schedules and willingness to adapt to changing locations. The Cook may also have a front-of-house presence, managing live carving stations for up to 1000 guests, showcasing both skill and composure in high-pressure situations.
Ideal candidates will bring a strong foundation in culinary arts, exemplified leadership skills, effective communication abilities, and solid math competency for precise ingredient measurement and inventory management. A minimum of a high school diploma or equivalent is required, alongside at least three months of experience as a line cook and pantry/prep cook. A culinary degree or extensive experience in restaurant, catering, or banquet cooking is highly preferred. Certification in food sanitation and safety, such as ServSafe, is also necessary.
