The role of Cook CD - Skilled is an integral position within the HMSHost culinary team. This non-exempt role requires a highly skilled professional responsible for preparing cooked foods across multiple stations, including Fry, Flat Top Griddle, Pantry, and egg cooking. The ideal candidate must be adept in all these station functions, ensuring the highest standards in food preparation, presentation, and safety are consistently met. Among the key responsibilities, the Cook CD - Skilled communicates efficiently regarding ticket times and potential issues to managers and servers, ensuring smooth kitchen operations and exceptional service delivery. The role involves following recipes and product directions meticulously, including seasoning, cooking, tasting, and carving various dishes such as soups, meats, vegetables, and desserts. Accurate record-keeping and food production planning are crucial, as is ensuring cleanliness and sanitation of workstations to adhere to strict HACCP standards and food safety protocols. Candidates should be capable of operating various kitchen equipment, measuring and mixing ingredients, and handling stock management tasks, including dating, rotation, and temperature checks. This role demands physical stamina and dexterity, including the ability to lift up to 40 pounds and work safely in hot, fast-paced environments using sharp utensils. Job Requirements

  • Food preparation skills and knowledge of HACCP standards
  • Minimum of 3 years of closely related cooking experience in high volume or fast casual dining restaurant environment
  • Food knowledge of sauces, soups, saute, broiler, fry, and pantry
  • Ability to speak, read and comprehend instructions, short correspondence and policy documents
  • Ability to lift and/or move up to 40 pounds
  • Ability to bend, twist and stand to perform normal job functions
  • Frequent immersion of hands in water and water diluted with chemical solutions
  • Frequent work with sharp knives, utensils, and hot plates
  • Experience working in hot environment
  • Supervisor or lead experience preferred

  • Capable of working in hot environments

Job Duties

  • Follow recipes and product directions for preparing, seasoning, cooking, tasting, carving, and serving food items such as soups, meats, vegetables, and desserts
  • Taste products, follow menus, estimate food requirements, check production, and keep records to plan production accurately and requisition supplies and equipment
  • Clean and sanitize workstations and equipment
  • Practice excellent food safety and sanitation practices and comply with HACCP standards
  • Operate a variety of kitchen equipment, measure and mix ingredients, wash, peel, cut, and shred fruits and vegetables
  • Stock, date, rotate, and check temperature of products
  • Perform other duties as assigned
