Job Description

The Cook role is integral to the dietary/food services department and reports directly to the Food Service Manager or Dietitian. This position is classified as non-exempt under the Fair Labor Standards Act, meaning the employee is eligible for overtime pay. The role involves preparing nutritious meals by carefully reviewing menus and patient diet plans to determine ingredient needs. The cook engages in food preparation activities such as cutting, chopping, marinating, cubing, and pureeing meats, vegetables, and fruits, making sure to follow specified recipes and use correct seasoning for menu items. Emphasis is placed on maintaining the highest level of cleanliness and sanitation in kitchen areas including counters, floors, and walls, while also handling the upkeep of kitchen appliances like stoves, ovens, grills, refrigerators, and freezers.

Portion control is another important aspect of the position, requiring the cook to perform portioning activities on patient trays in accordance with clear instructions. To minimize food spoilage and maintain food safety, the cook is responsible for timely food rotation practices. The kitchen environment demands the capacity to work under conditions which might include hot, cold, or wet surroundings, occasional outdoor work, and exposure to chemicals or radiation sources, albeit at low levels. Physical demands include standing, walking, lifting (ranging mostly between 2 to 30 pounds with occasional heavier lifts), bending, and twisting, typically between 34 to 66 percent of the workday.

The role requires mental alertness, effective communication skills in English, and the ability to work collaboratively within a team. The cook must maintain professional dress code standards, including the wearing of appropriate uniforms, minimal jewelry, and clean grooming practices. Job Duties

  • Review menu and patients diet plan to determine what ingredients will be required
  • Prepare food items by cutting, chopping, marinating, cubing and pureeing meats, vegetables and fruits
  • Make menu items according to specified recipes, making sure that the right amount of seasoning is used
  • Cook nutritious meals, according to standardized protocols, ensuring that cleanliness is given the highest priority
  • Perform portioning activities on trays, by following set of instructions, on a per patient basis
  • Oversee the cleanliness and sanitation of kitchen areas such as counters, floors and walls
  • Perform predictive and regular cleaning and upkeep on kitchen appliances such as stoves, ovens, grills, fridges and freezers
  • Timely perform food rotation activities so that food spoilage is kept in check
