This position is not eligible for remote work and does not include relocation expenses.

As a Cook at the VA Medical Center, the primary responsibility involves preparing nutritious, high-quality meals for veterans. This includes following menus, production sheets, and recipes precisely to ensure that meals meet established standards for both regular and modified diets. The cook is expected to perform a variety of cooking tasks that require attention to sanitation, safety, and culinary standards. Duties include preparing meals that require little or no processing like hot cereals, soups, sauces, and gravies, as well as washing, chopping, slicing, dicing, pureeing, and otherwise preparing ingredients. The role involves weighing and measuring ingredients accurately, combining them according to recipes, and minimizing food waste through efficient preparation techniques.

The position requires the use and maintenance of various kitchen equipment such as ovens, steamers, grills, mixers, food processors, and scales. Adherence to food safety protocols is paramount, including proper food handling, labeling, dating, and rotating items according to expiration and safety standards. Cleanliness and sanitation are essential components of the job; cooks are responsible for cleaning their work areas, utensils, and equipment regularly to maintain a hygienic environment. Job Requirements

Job Duties

  • Performs a full range of simple cooking which entails the preparation and cooking of meals that require little or no processing
  • Follows menus, production sheets and recipes to prepare items in the quantity needed
  • Prepares and cooks items such as hot cereals, concentrated or dehydrated soups, sauces, and gravies
  • Washes, peels, chops, grinds, pares, cuts, slices, dices, purees, dredges, flours, breads items
  • Weighs, measures, assembles ingredients for regular and modified diets
  • Combines ingredients according to precisely written recipes to produce quality food items, minimizing preparation time and food waste
  • Operates a variety of kitchen equipment including ovens, combi ovens/steamers, grills, slicers, mixers, steam kettles, blenders, food processors, and scales
  • Follows sanitary food handling procedures including covering, labeling and dating food items, and discarding ingredients by expiration date
  • Disassembles and assembles component parts and accessories for cleaning
  • Cleans, stores and maintains all kitchen utensils, equipment and work areas practicing a clean as you go concept
  • Cleans and sanitizes assigned work areas including worktables, sinks, blast chillers, racks, and carts
  • Rotates and stores perishable and non-perishable items according to service policies and removes outdated or damaged goods from stock
  • Monitors and maintains proper spacing of food products from floor, ceiling and shelving to ensure adequate air flow and spacing for optimal food safety
  • Performs other related duties as assigned
