The Dayton VAMC is currently recruiting for a Cook position within its Nutrition and Food Services department. This role is critical in supporting the overall health and recovery of veterans by providing nutritious, timely, and safe meals. The Cook is responsible for preparing meals in accordance with regular and modified diet plans tailored to the nutritional needs of veteran patients. The position requires adherence to strict sanitation and food safety standards, ensuring that all meals are not only nutritious but also meet the highest quality and safety benchmarks.
This full-time, permanent position operates on a Monday through Friday schedule from 0600 to 1430 hours, offering a competitive wage range of $23.61 to $27.53 per hour under the WG 4 pay scale. The individual in this role will be expected to perform a variety of cooking duties including weighing and measuring ingredients, preparing fresh and convenience food items, operating kitchen equipment, and performing daily cleaning and sanitation tasks. The role demands physical stamina for continuous standing, walking, bending, and lifting up to 40 pounds unassisted, emphasizing the importance of manual dexterity and safety in handling kitchen tools and equipment.
In addition to meal preparation, the Cook will ensure proper food storage and safety practices, including monitoring air flow around food products and handling pureed foods with precise consistency adjustments as required. There is an emphasis on following detailed menus, production sheets, and recipes to deliver meals that meet veterans' dietary requirements. The individual selected for this position must demonstrate competence in simple arithmetic for recipe scaling and exhibit careful attention to maintaining sanitary and safe food handling protocols.

Job Requirements
- U.S. citizenship
- suitable for federal employment as determined by background investigation
- successful completion of drug screening prior to appointment
- selective service registration required for males born after 12/31/1959
- completion of online onboarding and pre-employment identification verification
- completion of all application requirements
- willingness to serve a 1-year probationary period
- ability to continuously stand, walk, bend and lift/move objects up to 40 lbs unassisted
- manual dexterity to safely operate kitchen equipment and handle sharp knives

Job Duties
- Weighs, measures, and assembles ingredients for regular and modified diets
- cleans and sanitizes work areas, and performs deep cleaning tasks when needed
- prepares and heats convenience items such as frozen hash browns, fish fillets, and chicken nuggets
- uses simple arithmetic, such as multiplying and dividing ingredients in a recipe when preparing food items for the correct serving amount
- performs a full range of simple cooking by preparing and cooking items that require little or no processing
- prepares fresh, canned, and frozen vegetables
- follows menus, production sheets and recipes to prepare items in the quantity needed
- covers, dates, and stores food leftovers according to established local policies and procedures
- operates a variety of kitchen equipment
- disassembles and reassembles equipment for cleaning
- operates industrial dish washing machine
- monitors and maintains proper spacing of food products from floor, ceiling, and shelving to ensure adequate air flow and spacing of products for optimal food safety
- prepares pureed foods and adjusts consistency with thickeners
- washes, peels, and cuts fruits and vegetables
- follows appropriate safety procedures in operating a variety of kitchen equipment
- follows sanitary food handling procedures
- applies knowledge of sanitation principles to safeguard food against spoilage and waste
