The role of Lead Line Cook at ASM Global/SMG's Accesso ShoWare Center is vital to maintaining the food quality and efficiency of the catering and concession services in a bustling entertainment venue. This hourly non-exempt position offers a pay rate of $23.06 per hour and requires a candidate who can skillfully manage food preparation and kitchen operations in a high-volume, fast-paced environment. Reporting to the Sous Chef and/or Executive Chef, the Lead Line Cook is central to the success and quality of the venue's food services.
The Lead Line Cook's responsibilities include preparing food items for sale both in the main kitchen and concession locations, ensuring all food is produced to the highest standards while minimizing waste. This role demands excellent organizational skills to maintain sanitary and efficient workstations, proper food labeling, and food storage to comply with food safety standards. Strong communication and leadership capabilities are essential, as the Lead Line Cook plays a supervisory role ensuring all kitchen staff perform their duties correctly and efficiently.
The position requires experience in various cooking methods, the ability to follow recipes accurately, and maintaining clean and safe working conditions throughout all kitchen areas. The candidate must demonstrate a customer service-oriented attitude, focus on quality and urgency, and the capacity to multitask under pressure. Familiarity with proper food handling and sanitation practices is crucial, alongside maintaining grooming and dress code standards.
The Lead Line Cook should have a minimum of one year of food service experience, preferably working in high volume settings and have either a High School Diploma or GED, with culinary school preferred. Additionally, flexible availability to work nights, weekends, holidays, and varied shifts is necessary to meet the demands of the venue's event schedule. Prospective employees must pass credit and background checks and hold a current valid food handler permit.
ASM Global/SMG supports its employees with benefits including eligibility to join the 401K plan after working 1,000 hours within a 365-day period. Employees receive holiday pay at time and a half for holidays worked, accrue sick time at a rate of one hour per 30 worked which can be used in increments of two hours or more, and become eligible for medical, dental, and vision benefits after completing 1,560 hours within a year. Job Requirements
- High School Diploma or GED
- At least 1 year of experience in food service preparing meals
- Previous experience as lead line cook or line cook preferred
- Culinary school preferred
- Ability to work flexible hours including nights, weekends and holidays
- Must be able to pass credit and background check
- Must have current and valid food handler permit
- Must be eligible to work in the United States

Job Duties
- Maintains organized sanitary workstation at all times
- Set up and stock stations with work supplies
- Clean up work station and properly store and label any leftover food products
- Properly label and date food items for storage
- Assist in any and all food preparation for catering and concessions
- Minimize waste by controlling usage and following preset portioning
- Follow approved recipes and production standards
- Help to maintain all kitchen equipment and its cleanliness
- Maintain a clean, safe working environment
- Work at Carving Station and/or other locations on the main concourse during events
- Perform other duties as assigned
