About the Role:

The Cook position at Appellation Lodi is ideal for individuals passionate about food or experienced cooks eager to grow their skills in a dynamic, fast-paced kitchen. This role involves preparing a variety of menu items following specific recipes and high standards of presentation expected by the resort. The cook collaborates closely with the culinary team to ensure meals are prepared and served promptly, maintaining product freshness, proper rotation, and accurate labeling to minimize waste. An integral part of the role is to uphold cleanliness and organization within the kitchen, maintaining hygiene standards critical for food safety. This job requires adherence to established safety practices, including proper handling of kitchen tools and equipment.

Job Requirements

  • 1 - 3 years professional cooking experience
  • Knowledge of food preparation methods, kitchen and dining sanitation, and kitchen equipment use
  • Basic math skills
  • Ability to perform kitchen jobs unsupervised
  • Willingness to learn new skills
  • Ability to manage multiple priorities under stress
  • Flexibility in job roles
  • Ability to work nights, weekends, and holidays

Job Qualifications

  • 1 - 3 years professional cooking experience
  • Knowledge of methods and procedures regarding food preparation and kitchen sanitation

Job Duties

  • Prepare proper plate and platter presentation according to department standards
  • Assist chefs as needed
  • Have full knowledge of menus and recipes
  • Follow all recipe specifications and presentation guidelines accurately
  • Uphold quality standards, portion control, production level, and presentation of food according to company standards and recipes
  • Ensure proper rotation, labeling, and dating of products in storage areas to control waste and prevent loss
  • Maintain daily product freshness on assigned stations
  • Maintain a clean, neat, and well-organized work area including reach-ins, walk-ins, and counters
  • Ensure all products are prepared, held, and served at correct temperatures
  • Follow all work safety practices such as knife handling, meat cutters, lifting practices, oven, and stove top safety
