The Cook role at Shepherd Center is essential in supporting the delivery of high-quality meals for patients, staff, and visitors. This position requires culinary expertise with the ability to prepare food according to approved recipes in a sanitary and safe manner. The Cook navigates through various production positions, working collaboratively with other kitchen staff to ensure nourishing and appealing food offerings are efficiently prepared. Responsibilities include planning and preparing food in proper portions, slicing and carving meats and poultry per designated sizes, managing food production and tally reports to meet scheduling demands, and completing advance preparation tasks such as defrosting meat and producing necessary items for upcoming days.
Additional duties involve preparing and portioning salads and desserts, delivering nourishment to appropriate locations, and maintaining cleanliness and safety standards throughout the kitchen area. The Cook adheres strictly to sanitation and safety regulations, applying infection control principles diligently. Reporting any employee, patient, or visitor injuries or safety concerns is a critical aspect of this role. Compliance with all regulatory requirements, organizational policies, and procedures is maintained to uphold the high standards synonymous with Shepherd Center. Administrative tasks related to the role are performed as assigned to support overall kitchen operations.
Shepherd Center requires candidates for the Cook position to have a minimum of a High School Diploma or equivalent and ServSafe certification (either obtained prior to or during the first year of employment). Candidates should possess at least two years of experience in retail culinary food service or hold a degree in a food service specialty, along with basic knowledge of Microsoft Office Suite and the ability to pass a hospital-administered Cook's test. Preferred qualifications include Culinary Arts education or certification, prior experience in healthcare food service, and familiarity with electronic tray ticket systems such as CBORD or Computrition.
Physically, the role necessitates lifting up to 50 pounds, bending, squatting, and repetitive use of hands and feet, alongside pushing and pulling forces up to 25 pounds. Working conditions may involve potential exposure to blood and body fluids, necessitating strict adherence to safety and infection control protocols. Job Duties
- Plans and prepare food in appropriate size pans and garnishes them to provide an eye appealing product
- Slices, carves, and portions meats, fish, and poultry in accordance with designated portion sizes
- Runs food production and tally reports as a guide so that items are prepared according to time required to meet serving schedule and so that foods are acceptable quality
- Completes food preparation appropriately - reviews menu for the following 3-day period, pulling appropriate meat items to defrost
- completes preparation of items needed for the next day
- Prepares and portions salads and desserts
- Prepares all nourishments according to nourishment sheet and delivers them to the appropriate location
- Washes, air-dries, and stores dishes/pots and pans correctly (pans upside down, like dish items together, etc.)
- Serves food to patients, staff, and visitors
- Maintains work area in a clean, safe, and sanitary manner
- Adhere to and ensure adherence to all sanitation and safety regulations
- Ability to apply sanitation and infection control principles
- Responsible for the reporting of employee/patient/visitor injuries or accidents, or other safety issues to the supervisor and in the occurrence notification system
- Monitors and ensures compliance with all regulatory requirements, organizational standards, and policies and procedures related to area of responsibility
- Performs administrative duties as assigned and/or required
