Job Description

HDAE manages not only the housing facilities but also dining services, retail operations, event hosting, and transportation, encompassing a physical plant of over 3 million square feet and covering 250 acres of campus grounds.
The Cook position is located within the Campus Dining team, specifically at Carrillo Dining Commons, one of the central dining facilities serving the UCSB community. This full-time, career staff position offers an hourly wage of $25.00 and is classified under the non-exempt category, indicating eligibility for overtime pay. The work schedule primarily includes Saturdays through Wednesdays, from 12:30 pm to 9:00 pm, with Thursdays and Fridays off, though hours and days may vary.
In this role, the Cook is responsible for a diverse range of culinary duties, including preparing soups, casseroles, grilled and roasted foods, and working at a saute station, ensuring the assembly of made-to-order entrees. The position demands the preparation and service of up to 1,500 meals per shift, requiring exceptional culinary skills, efficiency, and attention to food quality. The Cook must maintain high standards of service, sanitation, and safety in a fast-paced, high-volume environment.
Beyond food preparation, this role involves assisting with student training, guiding them in food production techniques and sanitation practices, and managing work assignments to meet daily operational goals. The Cook also plays a key role in testing and revising recipes to accommodate diverse dietary needs, including Regional American, Asian, Italian, Mexican, vegetarian, vegan, and other special diets. This position demands adaptability and a commitment to maintaining food safety and quality standards, including adherence to HACCP protocols.

Job Requirements
- High school diploma or equivalent combination of education and experience
- 1-3 years culinary experience or culinary technique knowledge
- Satisfactory criminal history background check
- Ability to lift up to 50 pounds and stand for up to 8 hours per day
- Willingness to work varying days and hours including Saturdays through Wednesdays
- Must comply with University of California vaccination policies
- No visa sponsorship available
- Ability to work in a tobacco-free environment
Job Qualifications
- High school diploma or equivalent
- 1-3 years culinary experience in a high-volume environment or knowledge of culinary techniques
- Ability to use professional cooking methods including sauteing, grilling, frying, steaming, sauce and stock preparation
- Capability to help test and revise recipes for diverse cuisines and special diets
- Effective leadership skills to supervise and train student staff
- Knowledge of food safety and sanitation standards
Job Duties
- Prepare assigned menu items daily including soups, casseroles, grilled, roasted, and sauteed foods
- Maintain service, portion control, safety and sanitation assurance in assigned area
- Assist with student training in food production and sanitation
- Direct staff using current culinary techniques to ensure high quality
- Maintain food quality and safety guidelines and record HACCP time and temperature logs
- Provide assistance and support to other kitchen departments as needed
- Clean equipment and notify management of equipment needs
