Job Description

Willoughby Golf Club is a prestigious private club located in Florida, renowned for its exceptional facilities and impeccable service standards. We are currently seeking dedicated part-time or full-time cooks to join our esteemed culinary team. The Cook will report directly to the Executive Chef and is expected to follow the Executive Chef's direction at all times to support the club's mission statement and goals with food preparation and kitchen management. This role requires a flexible individual who can work various shifts to meet the needs of the club and its members. The successful candidate will possess strong culinary skills, be adept in kitchen management, and be motivated to maintain high standards of food quality and consistency.

In this position, the Cook will be responsible for a variety of food preparation tasks including the precise handling of knives for chopping, slicing, cutting, fabricating, trimming, and dicing ingredients according to the club's standards. The role involves performing mathematical menu conversions related to batch cooking methods and standard food preparation techniques. The Cook must be capable of preparing a wide range of dishes encompassing soups, sauces, vegetables, starches, meats, fish, and other menu items as prescribed by the Executive Chef.

Beyond food preparation, the Cook will lead and manage kitchen staff to ensure productivity and consistency in compliance with state, local, and federal regulations. This includes motivating kitchen team members, fostering a positive work environment that encourages achievement, and providing training in kitchen production, sanitation, and cost control measures. The role requires working across all kitchen stations including pantry, broiler, sauté station, expeditor, meat cutting, and sauce production, thereby requiring a versatile culinary skill set.

The Cook's duties include daily soup preparation, adhering to prep lists and recipes, preparing employee meals, managing food deliveries and inventory stocking, conducting line checks and tastings, and supporting ala carte lunch and dinner preparation. Responsibilities also extend to overseeing kitchen cleanliness and sanitation, executing closing procedures to secure food storage, collaborating on daily specials with the Executive Chef, and leading weekly deep cleaning projects.

Candidates must be experienced in managing food costs within budget guidelines and understanding food costing formulas and yield percentages. They will also play a key role in the daily execution and service of food production, including preparing table-talks for specials and sample dishes for pre-shifts in a timely manner.

The ideal candidate will bring at least five years of progressive culinary experience within a high-volume private club, resort, or hotel environment. Certification in Food Service Sanitation from the State of Florida is a mandatory requirement. Physical demands of the position include standing for long durations, walking, climbing stairs, balance, stooping, kneeling, crouching, bending, stretching, twisting, and lifting up to 50 pounds. The work environment is characterized by heat, humidity, and high noise levels, necessitating resilience and stamina.

Job Requirements

Job Qualifications
