As a Full-Time Cook at the Worcester County Sheriff's Office, the successful candidate will be responsible for preparing nutritionally balanced menus tailored to the needs of the inmate population, including those on specialized diets prescribed by the facility's physician. This role demands expertise in large-scale food production, a strong understanding of nutrition, and the ability to adhere to health, safety, and sanitary practices. The cook will be actively involved in all stages of food preparation, from creating side dishes and entrees to ensuring cleanliness and maintenance of kitchen equipment such as grills, fry-o-laters, ovens, and steamers.
In addition to food preparation, the role includes supervisory responsibilities for inmates assigned to work in the kitchen, ensuring both the quality of meal production and the safety and organization of the kitchen environment. Record-keeping and maintaining logs related to dietary allowances as recommended by the National Academy of Sciences are also key components of the position. The cook will coordinate with warehouse and vendors to requisition necessary supplies, demonstrating good communication and organizational skills.
Physical requirements of the job include the ability to lift up to 50 pounds, standing for extended periods, and working in potentially elevated temperatures in the kitchen environment. Additionally, the position requires operation of a box truck for food deliveries, for which a valid Massachusetts driver's license is mandatory.

Job Requirements
- High school graduate
- Minimum of two years experience as cook in institutional setting or equivalent combination of education and experience
- ServeSafe Certification
- Ability to lift 50lbs
- Massachusetts Driver's License
- Ability to operate a box truck for food delivery
- Ability to stand for extended periods
- Ability to work in hot kitchen environment
- Good physical condition for handling bulky or heavy food stock items
Job Qualifications
- High school graduate
- Educational courses in food management and production preferred
- Minimum of two years of experience as cook in institutional setting or any equivalent combination of education and experience
- Culinary degree and background preferred
- ServeSafe Certification
- Ability to operate a box truck for food delivery and operate all kitchen equipment
- Working knowledge of health, safety and sanitary practices in food preparation
- Knowledge of large-scale food production
- Knowledge of nutrition and modified diets
- Ability to follow standardized recipes, production sheets and menus
- Ability to understand and follow oral and written instructions
Job Duties
- Prepare nutritionally balanced menus for inmate population
- Prepare meals for inmates on special diets per direction of facility physician
- Maintain log books and diet logs
- Substitute nutritionally-like foods in special and regular meals to provide variety
- Prepare side dishes and entrees for each meal
- Assist in tray and food service
- Maintain cleanliness of grill, vats, steamer, fry-o-later, range, oven and other appliances used in food preparation area
- Maintain records regarding the meeting of dietary allowances recommended by the National Academy of Sciences
- Supervise storage of perishable and nonperishable foods
- Train and supervise the inmates assigned to work in the kitchen
- Monitor knives and all cooking utensils
- Communicate supply needs to or requisition supplies from the warehouse/vendors
- Maintain personal hygiene and attention to cleanliness
- Perform related duties as required
