Job Requirements

  • Minimum of tenth grade or above
  • GED or High School Diploma or above preferred
  • Six months experience in large quantity food preparation
  • Experience with therapeutic diet preparation preferred
  • ServSafe Food Safety Certification preferred
  • Food Handlers permit if required per state regulations

Job Duties

  • Review menus prior to preparation of food
  • Prepare food for regular and therapeutic diets according to the planned menu as instructed by the supervisor
  • Prepare alternative items to meet residents' individual needs and food preferences
  • Prepare and/or portion food using proper food handling and food safety techniques
  • Make only authorized changes to the planned menu and record the change according to established policy
  • Ensure food tastes good and is served in an attractive, appetizing manner
  • Utilize standardized recipes to prepare menu items
  • Deliver meals and snacks to designated areas according to established time schedules
  • Maintain proper temperature of food during preparation and service and record temperatures
  • Serve resident meals/snacks accurately in accordance with the planned menu and resident's diet order
  • Use correct portion control utensils during food preparation and service
  • Label, date, and store food properly
  • Monitor refrigerator/freezer temperatures and report discrepancies
  • Wash dishes according to established procedures and record sanitizer temperatures
  • Assist/direct daily cleaning duties
  • Keep work area clean and uncluttered
  • Perform cleaning assignments using proper chemicals
  • Use proper infection control techniques
  • Store dishes properly to prevent contamination
  • Assist in receiving and storing invoices for food and supplies
  • Manage food and supply inventory and report shortages
  • Use food supplies and equipment efficiently to prevent waste
  • Maintain security of the department
  • Operate equipment properly and maintain equipment condition
  • Complete tasks according to established schedules
  • Make recommendations for improvements in recipes, menus, and service
  • Work cooperatively with nursing center departments
  • Collaborate with dietitian and implement recommended changes
  • Interact positively with residents, families, and visitors
  • Demonstrate professional conduct and ethics
  • Process diet changes from Nursing Services
  • Attend in-service education and workshops
  • Assume responsibility of Nutrition Services Department in supervisor's absence
