Job Duties
- Review menus and production schedules regularly to determine types and quantities of food items to prepare and plan cooking schedules to meet meal schedules
- Measure, weigh and combine ingredients for quantitative preparation of hot and cold food items in accordance with established recipes
- Cook regular and diet menu items according to established procedures following accurate recipe production
- Ensure menu items are prepared in a timely manner and that items requiring advanced preparation are prepared, cooked and ready for assigned meal times
- Monitor consumption of assigned menu items and alter food production levels to avoid potential shortages or surpluses
- Organize and oversee work of Food Service Workers, preparing meals and ensuring food preparation is carried out according to established standards
- Inspect food storage areas and ensure foods are stored properly to prevent spoilage, stock refrigerators, freezers, and cabinets as necessary
- Complete and file daily temperature reports and checklists
- Ensure all equipment, counters, utensils and production areas are maintained in a clean and sanitary condition
- Call in work orders as necessary
- Monitor food inventories and requisition foods from storeroom as necessary
- Perform regularly the duties of the Food Service Worker
- Assist Sous Chef as needed
