Job Requirements

  • High school diploma
  • Two to three years food production experience in an institutional setting
  • Ability to perform math calculations
  • Ability to walk and stand for long periods up to 100% of the workday
  • Ability to lift and push up to 50 lbs
  • Ability to concentrate and pay close attention to detail for up to 50% of work time
  • Interpersonal skills to communicate effectively with staff and other department personnel and patients

Job Duties

  • Review menus and production schedules regularly to determine food types and quantities to prepare and plan cooking schedules to meet meal schedules
  • Measure, weigh and combine ingredients for quantitative preparation of hot and cold food items according to established recipes
  • Cook regular and diet menu items following accurate recipe production procedures
  • Ensure menu items are prepared timely and items requiring advanced preparation are ready for assigned meal times
  • Monitor consumption of assigned menu items and adjust food production levels to avoid shortages or surpluses
  • Organize and oversee work of Food Service Worker preparing meals and ensure food preparation meets established standards
  • Inspect food storage areas and ensure proper food storage to prevent spoilage
  • stock refrigerators, freezers and cabinets as necessary
  • Complete and file daily temperature reports and checklists
  • Maintain cleanliness and sanitation of equipment, counters, utensils and production areas
  • call in work orders as necessary
  • Monitor food inventories and requisition foods from storeroom as needed
  • Perform duties of Food Service Worker regularly
  • Assist Sous Chef as needed
