The Cook 1 position at Pebble Beach Company is an essential role within the kitchen team, responsible for producing hot and cold food items at the highest standards set by the Lodge kitchen management. This role is ideal for a skilled cook with at least five years of kitchen experience, including two years in a similar role at a premier restaurant, resort, or hotel. The role requires a high school diploma or equivalent and basic hot and cold food preparation knowledge, along with proficient knife skills. Preferred candidates may have graduated from an accredited culinary program or completed an apprenticeship, which would further enhance their culinary expertise and professional growth.

The Cook 1 prepares a wide array of menu items such as cold sandwiches, salads, dressings, soups, sauces, and basic hot food using techniques like frying, grilling, baking, roasting, and poaching. The role demands meticulous attention to food presentation, quality control, and timing to ensure each dish is prepared consistently and served attractively. Responsibilities also include training junior cooks, assisting with banquet functions, maintaining clean and organized workstations, and collaborating closely with team leaders and the butcher to maintain inventory and portion control.

Job Requirements

Job Duties

  • Assign tasks to employees with the approval of team leaders
  • prepare cold food sandwiches, salads, and dressings
  • basic vegetable prep including slicing and dicing with proper handling
  • prepare and handle meat, fish, vegetables, starches, and other ingredients
  • perform basic hot food preparation using frying, grilling, baking, roasting, and poaching techniques
  • prepare sauces including saucier and butter sauces
  • produce all menu items including soups and sauces as directed by team leaders
  • cook for employee dining room and set up salad bar
  • maintain proficiency in knife and equipment skills
  • keep recipe and setup documentation
  • follow recipe cards exactly and assist in preparing new cards for specials or new menus
  • work both sides of Stillwater Grill, Tap Room, and banquet stations
  • set up mise en place for stations
  • set up buffet stations and perform carving, stir fry, or other designated station functions
  • time cooking to ensure orders are completed simultaneously
  • check quality and consistency of food
  • arrange food attractively on plates
  • assist with banquet dish up
  • garnish plates
  • support other cooks and lines fostering teamwork
  • assist special events as needed
  • be cost conscious
  • rotate food in storage to ensure freshness
  • keep work areas and refrigerators clean and neat
  • clean and care for all equipment and cooking surfaces
  • report faulty equipment or unsafe conditions
  • train new kitchen staff in responsibilities, skills, and kitchen organization
  • coordinate with butcher for consistent product portions and inventory
  • contribute to daily food orders
  • discuss daily events and production schedules with team leaders
  • suggest improvements to food production and presentation
  • requisition food from Purchasing Department in absence of team leaders
  • comply with all company safety, health, and sanitation policies and procedures
  • perform other duties as assigned by supervisor
